Street Style Amritsari Paneer Bhurji Recipe with step wise pictorial and video method.
Though Paneer Bhurji is common to most Indian households but this Amritsari style paneer bhurji version has a distinctly richer, more street-food-like character.
Although most of the ingredients for this street style paneer bhurji are similar to ordinary paneer bhurji, but the majority difference lies in the fact that this Amritsari Paneer Bhurji has curd, besan and lemon juice.
This Amritsari style paneer bhurji with curd is something which reminds you of paneer ghotala and pav bhaji, popular street food from Surat, Gujrat and Mumbai, Maharashtra respectively.
This crumbled paneer masala recipe is slightly tangy because of curd and lemon and this street food has a shiny texture because of besan. Rest, the paneer in itself a rich ingredient.
Traditionally, this punjabi paneer bhurji is served with bread, but you can also serve it with kulcha, pav or even naan, paratha or roti depending on what you have.

Take curd in a bowl and add kashmiri red chilli powder, red chilli powder, turmeric powder, coriander powder, garam masala and salt.
Mix well.

Heat butter and oil in a pan.
Add besan and cumin seeds.
Roast on low heat for 2-3 minutes or until besan turns slightly brown and aromatic.
Then add ginger garlic chili paste and kasuri methi.
Cook for a minute.
Add onion and tomatoes. Mix well.
Cover and cook on low heat.
Keep stirring occasionally and also keep mashing the tomatoes.
In 10 to 15 minutes, onion and tomatoes will be cooked thoroughly and oil is seen separating.

Add masala curd.
Whisk continuously otherwise curd will curdle.
Stop when curd begins to boil.
Add paneer after mashing or grating and coriander leaves.
Lastly squeeze lemon.
Mix well.

Enjoy with bread and chopped cucumber, onion, green chilli and lemon wedges on the side.

Street Style Amritsari Paneer Bhurji Recipe is a spicy, flavorful paneer dish that brings the taste of Amritsari street food home.
Ingredients
1 cup = 250 ml
FOR MASALA CURD
- 1 cup fresh curd
- 1 tsp Kashmiri red chilli powder
- 1/2 tsp red chilli powder
- 1/4 tsp turmeric powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- Salt to taste
FOR MAKING BHURJI
- 2 tbsp butter
- 1 tbsp oil
- 2 tbsp gram flour/besan
- 1 tsp cumin seeds
- 1 tbsp ginger garlic chili paste
- 1 tsp kasuri methi
- 2 onion (finely chopped)
- 2 tomatoes (finely chopped)
- 250 gram paneer
- 1 tbsp coriander leaves
- Juice of 1/2 lemon
