WHAT IS PUGGA ?

 

Pugga, also pronounced as Bugga is a traditional sweet made with evaporated milk aka khoya, sugar and white sesame seeds.

ORIGIN OF PUGGA

 

Pugga hails from 2 regions, one Jammu part of Jammu & Kashmir and another is Punjab, though it is made in other parts of North India as well.

In Jammu, pugga is made and eaten as a parsad at the time of breaking the fasting and in Punjab, it is made during Lohri and Makarsakranti.

PUGGE KA VRAT IN JAMMU

 

Those hailing from Jammu must be well versed with the most famous Pugge ka vrat observed across the region.

This Vrat is also called by the names Sakat Chauth, Ganesh Chauth or Tilkuta Chauth. Lord Ganesha and the Moon are worshiped on Pugga Vrat.

This fast (vrat) is commonly observed mainly by the Duggar (Dogra) community of Jammu and it falls on the fourth day of Krishna paksha, (the fading phase of moon) in the month of Magha according to Hindu lunar calendar.

This fast generally arrives in the month of January every year.

Its a full day fast which begins with the sun rise and ends with the sighting of the moon and the fasting mothers break the fast after giving arg to the moon.

Mothers perform this vrat for the good health, wealth, long life and overall welfare of their children.

PUNJABI BUGGA

 

Also called Til Pugga, we don’t know the traditional method of making it but that is also an amalgamation of khoya, white sesame seeds and sugar.

Pugga has no religious relevance in Punjab or other North Indian states but it is specially prepared to celebrate the festival of Lohri and Makarsakranti.

Also the very purpose of consuming this dessert is to make oneself warm during the highly freezing winter cold.

INGREDIENTS USED IN MAKING PUGGA

 

KHOYA : Also called by the name Mava, this is one of the prime ingredient of pugga.

There are three types of khoya ie batti, chikna and daanedaar. The best khoya is the Chikna khoya for the present recipe.

We have used market bought khoya to make this recipe but you can use
homemade khoya as well.

SESAME SEEDS: This recipe uses only white sesame seeds but don’t use the black one. Sesame seeds are the great source of protein, calcium, phosphorous and magnesium. It produces heat in the body, increases our immunity and prevents us from the bad effects of the cold climate.

SUGAR : This recipe uses normal white refined sugar, which is then turned into bura by cooking. However there are some recipes which uses direct bura sugar.

Initially we also planned to cook it using bura but before that, we just thought of consulting a local halwai.

He taught us the way which we followed to make this recipe.

STEP WISE PICTORIAL RECIPE OF JAMMU SPECIAL PUGGA HALWAI STYLE

 

1. Take a heavy bottomed pan and add white sesame seeds in it. The quantity of sesame seeds and other ingredients is given at the end of the post in recipe card.

2. Roast the seeds on low heat while stirring continuously to prevent them from burning.

3. Once they turn very slightly brown, take them out in a wide plate or tray and leave them to cool completely.

4. Once cool, grind them to a coarse texture. Keep aside.

5. Now add sugar and water in the pan & put the pan on medium to high heat.

6. Let sugar dissolve completely and then bring the heat between low to medium.

7. In 3-4 minutes, sugar will become thick and frothy. Keep stirring. Watch video attached to this post for better understanding.

8. Soon after sugar will begin to dry and at the initial stage of creating crystals.

9. Now IMMEDIATELY add khoya to the pan by crumbling.

10. Mix very well.

11. Let khoya completely melt and simmer for a minute or two. Keep stirring.

12. Break the sugar crystals, if there’s any.

13. Remove the pan from the heat and let khoya sugar mixture turn completely cool.

14. Now add coarsely grinded sesame seeds and cardamom powder.

 

15. Give it a good mix.

17. Now start shaping the dough and for that take a ball size dough and roll it round using your greased hand.

18. Then roll the ball in powdered sugar or bura.

19. Gently press the top of the ball with a thumb creating a dent on the top.

20. Tick a raisin over the top. Likewise prepare more puggas with the dough.

Jammu special pugga is ready. Enjoy.

NOTES

  1. This recipe can be made with jaggery as well, but traditionally jammu pugga is made with sugar only.
  2. Over the top, it is only raisin which is tucked. Otherwise you can put any dry fruit of your choice.

  • 500 gram khoya/Mawa
  • 300 gram White sesame seeds
  • 300 gram sugar
  • 100 ml water
  • 1/2 tsp cardamom powder
  • Raisins as required
  • 1/2 cup bura or powdered sugar

Instructions
