Vegan Coconut Kulfi recipe with step wise pictorial and video method.

Kulfi is an Indian dessert usually made with milk, sugar and cardamom cooked together and frozen thereafter.

As kulfi is being made using milk as a primary ingredient, making it unsuitable for vegans. So we thought of making it vegan friendly using fresh coconut instead of milk.

This vegan coconut kulfi is made without any animal products. It’s creamy and coconutty, with a hint of delicious cardamom flavor.

Made using very simple and basic ingredients, this kulfi is perfect for hot days or as a tasty end to a meal.

We have used fresh coconut in this recipe after grinding it with coconut water and coconut milk but you can try it with coconut milk as well.

 

 

Vegan Coconut Kulfi recipe

STEP WISE PICTORIAL RECIPE OF VEGAN COCONUT KULFI RECIPE

 

Take a fresh coconut. Remove its hair.

Poke a hole in the 3 eyes of coconut shell.

Drain out all the water from coconut. Sieve the water while taking out or you can do it later.

Take the coconut meat out of the shell by breaking the coconut.

Remove the brown part of the coconut and wash them.

Chop the coconut into small pieces. Separate some of the pieces for later use.

Put the coconut pieces in a blender jar.

Add coconut water, sugar, cardamom seeds and coconut milk. Instead of coconut milk, you can add drinking water or coconut water as well.

Blitz to make a thick batter like consistency. If the mixture is not getting the desired consistency, you can add more milk or water.

Pour the batter in kulfi moulds. If you don’t have kulfi moulds, you can use small paper cups.

Put some coconut chunks in each glass and mix.

Wrap an aluminium foil over the glass and mark a small cut over the foil.

Insert a wooden kulfi stick.

NOTE : If you don’t have wooden sticks, you can use some light weight spoon or forks having back side in, although it doesn’t look presentable.

Freeze 6-7 hours or overnight.

Remove the aluminium foil. Cut the paper cup.

Take out the kulfi.

Enjoy.

  • 1 Fresh Coconut
  • 3/4 to 1 cup Coconut milk ((or drinking water or coconut water))
  • 6 tbsp sugar ((or as per your requirement))
  • Seeds of 2 cardamoms
