Paneer ice cream is a delicious and unique twist to regular ice cream recipe made with cream.
Not just cream, but this ice cream made with paneer has another surprising element who has replaced sugar, the common ingredient from ice cream with naturally sweet ingredient honey.
One more amazing part of the recipe is that it is no cook recipe. You just need not to switch on the gas, all is done inside a grinder jar. Just blitz and its done.
In regular ice cream, be it of any flavour, the base is being provided by cream but the present recipe is the amalgamation of paneer primarily, then comes the almonds, cashews and malai to provide a rich and creamy base.
Besides, this is the healthy alternative to cream based ice creams loaded with processed sugar.
This recipe is rich in protein and healthy fats due to the presence of paneer, almonds and cashews.
It has no artificial flavors or preservatives. Yes, it has natural sugars from honey.
INGREDIENTS USED IN MAKING PANEER ICE CREAM
PANEER : paneer, which is called Indian Cottage Cheese is the star ingredient of this recipe. But prefer to use the fresh paneer.
If you are planning to make paneer at home, nothing like that. You need not to go to the stage of making paneer. Just chenna is enough.
HONEY : Honey is the second main ingredient for this recipe. We haven’t personally tried but we think that even dates paste or dates syrup will also work.
But after adding honey and mixing everything, make sure the sweetness is enough or not. So do taste the mixture before freezing.
ALMONDS : You have two ways to add almonds, either soak them overnight, peel and then add or immediately boil for 2 minutes, peel and add.
It’s all about time you have. If you have suddenly decided to make this ice cream, then it is obvious that there’s no time for overnight soaking, then second trick is the best.
CASHEWS : Cashews can be added both ways; after soaking or instantly. Soaking them for 15 minutes makes it more creamy and smooth.
SAFFRON: The best way to add saffron in anything is to dissolve it in milk or water. So if you are adding saffron, soak it in 1 tbsp of warm milk for 5-10 minutes and then add.
MALAI : Malai is also optional but it will help in enhancing the creamy texture of the recipe. Although you can replace malai with cream or condensed milk, but that will fail the very essence of the recipe which is no cream and no sugar. So if you don’t have malai, just skip.
CARDAMOMS : Any Indian dessert is incomplete without cardamoms. We have added them by removing the outer green skin and only adding black seeds. In place of it, you can also add cardamom essence as well.
MILK : Milk is there to mixup everything and bring everything to a creamy texture. So milk is necessary but you can adjust it’s quantity.
So go ahead and try something new — a fusion of traditional Indian ingredients with a modern twist.
STEP WISE PICTORIAL RECIPE OF PANEER ICE CREAM
Take a grinder jar and add paneer after crumbling or cutting it. You can use homemade chena as well.
Add rest of the ingredients as mentioned in the list of ingredients in the recipe card below at the end of the post.
Give it a good blend so that everything turns creamy. Do taste and add more honey if needed according to your taste.
Transfer in an air tight container.
Freeze for 8 hours.
Serve chilled after garnishing with nuts and drizzle of honey. Enjoy.

Ingredients
- 250 grams fresh paneer
- 12-15 almonds (soaked & peeled)
- 10-12 cashews (soaked for 15 minutes)
- 2 tbsp malai (optional)
- Seeds of 4 green cardamoms
- 1 tbsp Saffron milk (1 tbsp warm milk+ pinch of saffron - optional)
- 7-8 tbsp honey (adjust to taste)
- 1/2 cup milk
Instructions
