Nippattu Recipe in Air Fryer and Oven | Crispy Karnataka Nippattu Without Deep Frying with step wise pictorial and video method.
Nippattu is a crispy savory snack from South India and more closely associated with the state of Karnataka.
Primarly made with rice flour, all purpose flour and semolina, this crispy nippattu is although a snack, but quite different in terms of taste.
Where usually snacks call for just flour and few basic spices, this Karnataka style nippattu recipe also demands roasted peanuts and chickpeas alongwith other spices with kashmiri red chilli powder for good colour and curry leaves for that nutty flavour and aroma.
Usually nippattu is round and deep fried, but when you are cooking anything at home, the beauty lies in the liberty you can take.
We have given these crispy nippattu recipe a different shape and they are air fried and baked instead of deep frying. Also we have replaced all purpose flour with whole wheat flour.
And let us tell you that this crispy nippattu recipe without deep frying has no difference in taste and texture in comparison to the nippattu made by deep frying. Hence you can call it a guilt free snack made without compromising with the authentic taste.
Once made and cool down completely, you can store this homemade south indian nippattu on air tight box for about 2 months.
So make it and enjoy as a tea-time snack or make it a part of festive occasions and special gatherings.
Step Wise Pictorial recipe of Nippattu Recipe in Air Fryer and Oven | Crispy Karnataka Nippattu Without Deep Frying
Take roasted peanuts and roasted chickpeas in a grinder jar.
Grind to a coarse powder.
Take this powder to a bowl along with rice flour, whole wheat flour, semolina, cumin seeds, white sesame seeds, asafoetida, curry leaves, kashmiri red chilli powder and salt.
Give them a good mix.
Add hot oil and mix again.
Now start adding water, little at a time, and start kneading a dough.
The dough should be normal, so that semolina absorbs some water and dough turns tight.
Rest the dough for 15-20 minutes.
Take a polythene sheet and grease it with oil.
Put a portion of dough and cover it with another greased polythene sheet.
Roll it, neither too thin, not too thick.
Mark cuts using a cookie cutter of the shape of your choice.
Likewise make with the entire dough.
Now you can deep fry them but we have air fried and bake them.
For air frying, arrange them in a greased air basket, brush oil on them and air fry @180°C for 10 minutes.
Take the basket out, turn the sides of each nippattu.
Again apply oil on the top.
Air fry further @180°C for 5 minutes.
For baking, arrange the nippattu on a baking tray lined with greased butter paper or silicon mat.
Brush oil on each one of them.
Bake in the preheated oven @180°C for 30 minutes or until it turns brown enough.
Take it out and let cool down completely.
Nippattu is ready. Store in Air tight container and enjoy with a cup of tea.

Ingredients
1 cup = 250 ml
- 1/4 cup roasted peanuts
- 1/4 cup roasted chickpeas (or roasted chana dal)
- 1 cup rice flour
- 1/4 cup whole wheat flour (or all purpose flour)
- 3 tbsp semolina
- 1 tsp cumin seeds
- 2 tsp white sesame seeds
- 1/8 tsp asafoetida/hing
- Handful of curry leaves
- 1 tbsp kashmiri red chilli powder
- 1 tsp salt
- 2 tbsp hot oil
- Water as required
