WHAT IS MAKHANA AND CHIVDA?

 

MAKHANA, also named as phool makhana, is called by various names like Lotus seeds, Euryale Feroz, Fox nuts and gorgon nuts. This Glutenfree seed comes from a plant named Euryale Fox which grows in stagnant water.

And CHIVDA means mixed snacks. A kind of mixture of spicy dried ingredients into one recipe makes a Chivda.

Dried ingredients may include fried lentils, peanuts, sev, corn flakes, flattened rice, lotus seeds and many more. This list can go endless.

MAKHANA AND ITS RELIGIOUS SIGNIFICANCE

 

Makhana is considered as the God’s food and is widely used in religious ceremonies like offering puja and performing havan.

Due to its heavenly nature and bring satvik, this is the most popular and highly consumed nut during Navratri and other fastings.

MAKHANA ; A SUPER FOOD

 

It is amazing to know that as per some nutritionists, makhana is more healthy than almonds and walnuts.

It is a complete source of magnesium, protein, fiber, potassium, zinc and iron.

It’s a perfect snack option for weight watchers because it helps to satiate those in-between meal hunger pangs.

DIFFERENT WAYS TO CONSUME MAKHANA

 

Makhana seeds can be eaten raw, ground or roasted.

You can use them in making sweet puddings like kheer or savoury raita.

A very popular sabji named Methi matar makhana has these seeds inside.

Soaked and pureed makhanas are added to gravies and soups to make them creamy and rich.

The list doesn’t stop here. It is used in so many delicious ways.

Once they cool completely, store them in an airtight container. They stay good for up to 8 to 10 days.

Makhana namkeen recipe (for vrat)

STEP WISE PICTORIAL RECIPE OF PHOOL MAKHANA CHIVDA

 

  1. Take a non stick wide pan and add makhane in it.
  2. Begin to dry roast them on low heat.
  3. Roasting makhana will take 8 to 10 minutes and with each passing time, they will begin to receive brown roasting spots.
  4. After the said time, take up a single makhana and press it with your fingers. If it has that crispy sound, they are done.
  5. Take out roasted makhanas in a separate bowl. Keep aside.
  6. Place the pan back on heat and add desi ghee in it.
  7. Add almonds, cashews and peanuts. Roast them till they turn crisp and brown.
  8. Lift these roasted nuts with spoon in a such a way that ghee rests in pan and add these nuts in the same bowl carrying roasted makhanas.
  9. There’s still much ghee left in the pan. Now add coconut in it.
  10. Roast coconut till it becomes slightly brown and transfer to the same bowl.
  11. Add cashews and roast. They puff up immediately within seconds. Transfer them to in the bowl carrying rest of the roasted ingredients.
  12. Lastly add green chillies and curry leaves. Roast for couple of seconds.
  13. Transfer these roasted chillies and leaves in bowl.
  14. Finally add rock salt, dry mango Powder and black pepper powder in roasted ingredients. Mix well.
  15. Makhana namkeen is ready to be eaten. But before serving, check the seasoning. Add if anything is felt less.Enjoy.

NOTES

1. If not making for fasting, you can add chaat masala, regular salt or do any other seasoning of your choice.

2. For a slightly sweet touch, you can add a teaspoon of powdered sugar also.

Ingredients
  

1 cup = 200 ml

  • 4 cup lotus seeds/makhana
  • 20-25 almonds cut into halves
  • 20-25 cashews cut into halves
  • 1/4 cup peanuts
  • 1/4 cup raisins
  • 1/2 cup dry coconut cut in thin strips
  • 2 green chillies cut into pieces
  • 8-10 curry leaves
  • 1 tsp black pepper powder
  • 1 tsp dry mango Powder
  • 1 tsp rock salt/Sendha namak
  • 1 tbsp clarified butter/desi ghee

Instructions
