Carrot rice recipe | carrot pulao recipe with step wise pictorial and video method.

Vegan and gluten-free, carrot rice is a simple, easy, quick and delicious pilaf recipe made with very regular and basic ingredients.

These rice are so delicious that you really don’t need any accompaniment with them. They taste amazing as it is. But if you want to pair it with something, then serve it with yoghurt or raita.

A perfect and healthy recipe for tiffin box, carrot pulao is something your kids are going to finish in no time.

Furthermore, the best part of the recipe is that you can use fresh as well as leftover rice too. And also no pressure cooker or instant pot is needed. But merely a regular will do.

Though these rice can be made in Instant Pot as well as pressure cooker also, but we always prefer to prepare it the way shared in this post.

We love that crunchy bite of undercooked carrots  While cherishing this recipe but if we cook them in IP or cooker, the carrots will turn completely soft and mushy because we have to cook them at par with rice. However choice is yours.

Carrot rice recipe

Step wise pictorial method of Carrot rice recipe

 

  1. Put oil in a pan and place on low heat.
  2. Add bay leaf, cumin seeds, cinnamon, cloves, fennel seeds, green cardamoms, black cardamom, star anise, cashews and ginger. Saute till ginger turns slightly brown.
  3. Add green chilli & onion and saute till onion turns pink and translucent.
  4. Now add turmeric, red chilli, coriander powder and garam masala. Mix.
  5. Add grated carrots and mix well.
  6. Cover the pan with a lid and let carrots simmer for about 10 minutes on low heat.
  7. After the said time, add cooked rice, salt and coriander leaves. Mix very well without breaking the rice.
  8. Put on lid on and let rice simmer for a minute or until rice turns warm enough to eat.
  9. Carrot rice is ready.

Ingredients
  

1 cup = 200 ml

  • 2 tbsp Oil
  • 1 bay leaf
  • 1 tsp cumin seeds
  • 1 inch cinnamon stick
  • 2 cloves
  • 1/4 tsp fennel seeds
  • 2 green cardamoms
  • 1 black cardamom
  • 1 star anise
  • 7-8 cashews
  • 1 tbsp ginger grated
  • 1 green chilli chopped
  • 1 onion chopped
  • 1/4 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • 1.5 cup Grated carrots from about 3 carrots
  • 3 cup rice cooked
  • Salt to taste
  • 1 tbsp coriander leaves/cilantro
