Chickpeas are the one which absorb flavours so beautifully and goes well with anything associated to. And so is the case in this recipe as well.
Soft quinoa tortilla, tongue tickling green chutney spread, sticky and delicious Chickpeas stuffing topped with crunchy raw vegetables with a drizzle of lemon and chaat masala make the wrap more flavorful and moist.
This easy vegan chickpea wrap for quick meals was so filling that one wrap was more than enough for one individual in our family as well had it for the dinner.

MAKING OF CHICKPEAS STUFFING
Heat oil in a pan and add cumin seeds. Let cumin crackle. Add onion, tomato, ginger garlic paste and green chilies. Also add red chilli powder, turmeric powder, coriander powder, salt and garam masala. Give them a good mix. Cover and cook on low heat. Let the tomatoes turn soft and mushy and oil separated. Add boiled Chickpeas. Do not add the water in which chickpeas were boiled. Mix well. Mash few of the chickpeas to get the sticky kind of stuffing.
ASSEMBLING OF QUINOA CHICKPEA WRAPS
Take a quinoa tortilla and spread green chutney. Arrange chickpeas stuffing in the very middle of tortilla vertically. Put some carrot, onion and cabbage Juliennes. Squeeze lemon juice all over the stuffing. Sprinkle roasted cumin powder and chaat masala. Roll the tortilla tightly and wrap inside the butter or parchment paper.

NOTES
- You can use canned chickpeas as well.
- We have used green chutney premix which is an instant version of green chutney. Just mix in some water in green chutney premix and chutney is ready.
- You can use any of the sauces for flavouring your wrap, like Tomato Ketchup, Sriracha Sauce, Sweet Chili Sauce, Barbecue Sauce, vegan Mayonnaise or Hot Sauce in the catagory of vegan sauces. If vegetarian, you can opt for mayonnaise, Chipotle Mayo, Ranch Dressing, Thousand Island Dressing or even Honey Mustard for sweet and tangy flavour.

Ingredients
1 cup = 250 ml
FOR MAKING CHICKPEAS STUFFING
- 2 cup White Chickpeas (boiled)
- 1/2 tsp cumin seeds
- 1 onion (chopped)
- 1 tomato (chopped)
- 1 tsp ginger garlic paste
- 2 green chilies (chopped)
- 1 tsp red chilli powder
- 1/4 tsp turmeric powder
- 1 tsp coriander powder
- 1/2 tsp garam masala
- Salt to taste
- 2 tbsp oil
FOR ASSEMBLING QUINOA CHICKPEA WRAPS
- 4 Quinoa Tortillas
- Green Chutney (we used the premix)
- Vegetables Juliennes (carrot, cabbage, onion)
- Lemon juice
- Roasted cumin powder
- Chaat Masala
