Carrots and peas sabzi | Peas and carrots recipe Indian | Gajar matar ki sabji with step wise pictorial and video method.
Gajar means carrots and matar is green peas in Hindi.
This combo is a much loved delicacy in winters from North India. During these cold months, markets are loaded with lots of fresh carrots and green peas, so this is obvious to make this delicious meal.
This is commonly made in a dinner and served with Indian flat bread/roti/chapati.
There are some people who don’t eat onion and garlic and this simple stir fry is perfect recipe for those.
Just few simple regular spices go in this recipe and you are sorted.
TIPS FOR PERFECT GAJAR MATAR KI SABZI
1. Cut the carrots in small size, preferably to the size of green peas. Otherwise peas will turn soft immediately but carrots will remain raw.
2. Although you can use any oil but prefer to use mustard oil only because Indian cooking tastes best in mustard oil.
3. If using mustard oil, cook it properly till the smoking point. If oil remains undercooked, it’s pungent smell will spoils the taste of food.
4. Before adding the spices, make sure oil is not extremely hot otherwise they will burn immediately.
5. Cook the carrots and peas till they turn soft and tender. If they are still hard and water has dried up, you can add more water.
STEP WISE PICTORIAL RECIPE OF CARROTS AND PEAS SABZI
1. Add oil in a pan. As we are using mustard oil, it needs to be smoked first.
2. As the oil must be very hot, switch off the heat and let oil cool down a bit.
3. Add cumin and let it splutter on low heat.
4. Then add ginger and let it turn slightly brown.
5. Add turmeric powder, red chilli powder and coriander powder. Mix.
6. Add green peas, carrots and salt. Mix.
7. Then add water and put the lid on.
8. Let it cook on low to medium heat while stirring at intervals.
9. When the peas and carrots turn soft enough to eat, add garam masala and mix.
10. Gajar matar ki sabji is ready.

Carrots and peas sabzi
Ingredients
- 250 gram Green peas (fresh or frozen)
- 250 gram carrots (washed (peeled & cut into small pieces)
- 1 tsp cumin seeds
- 1 tsp ginger (crushed)
- 1/4 tsp turmeric powder
- 1 tsp red chilli powder
- 1 tsp coriander powder
- 1 tsp garam masala
- Salt to taste
- 2 tbsp cooking oil of your choice (we used mustard oil)
- 1/4 cup water
Instructions
- Add oil in a pan. As we are using mustard oil, it needs to be smoked first.
