Rajgira Ladoo recipe | how to make amaranth laddu | rajgira (amaranth) ke ladoo are extremely easy to make & the ingredients you need are very basic. commonly eaten during vrats, rajgira, also named as amaranth is a good source of fiber and combination of it with jaggery makes these ladoos iron and fiber rich.

Recently navratras were going on & that was a fasting period. Along with many more recipes, rajgira kheer is commonly made so obviously there was lots of rajgira left in the pantry. After the navratras are over, we decided to consume & finish rajgira by making this delicious rajgira ladoo recipe.

To make these laddus, you need roasted rajgira. I do remember that long back, only the unroasted rajgira was sold in the market and to make kheer, during navratras, it was first need to be dry roasted in a pan on low flame.

Rajgira puffed up into a tiny white pearls while roasting & it used to be a amusing vision for me as a kid. Instead of ladle, my mother used to roast rajgira with kitchen towel. Making a lump of kitchen towel holding in her hand, she used to scooch rajgira with light hands to prevent it from burning & for providing equal amount of heat to rajgira, while it is being roasted.

But now, even the roasted rajgira is commonly available in the shops and since years, we are purchasing roasted rajgira only. It has definitely saved lots of time in making any recipe using rajgira. So go ahead with the pre-roasted rajgira & if it is not available in your city/town, then do roast rajgira following the method elaborated above.

Rajgira Ladoo recipe

  1. In a bowl add rajgira and roughly chopped almonds & raisins. mix.rajgira ladoo recipe
  2. Now take a pan, add desi ghee in it and put on low flame.rajgira ladoo recipe
  3. When ghee melts, add jaggery and water in it.rajgira ladoo recipe
  4. Let the jaggery melt.rajgira ladoo recipe
  5. Transfer this melted jaggery in the bowl carrying rajgira mixture. Better use a strainer so that any impurity in jaggery withholds.rajgira ladoo recipe
  6. Mix the mixture properly & let it cool a bit so that you can touch it with bare hands.rajgira ladoo recipe
  7. Wet your hands & take a small amount of mixture & roll it between your palms. Keep on making round balls with the entire mixture.rajgira ladoo recipe

NOTES

  1. If the mixture will turn completely cool, you won’t be able to bind it to give a shape of ladoos. so fasten your hands while rolling them.
  2. In case the mixture turns cool, then slightly warm it to make it worth binding.
  3. If for any reason mixture turns dry, then add few drops of warm water to make it correct.

Ingredients
  

  • 2 cup Rajgira roasted
  • 2 tbsp Desi ghee
  • 1 cup Jaggery
  • 2 tbsp Almonds chopped
  • 2 tbsp Raisins
  • 1/4 cup water

Instructions
 

  • In a bowl add rajgira.
  • Further add roughly chopped almonds & raisins.
  • Now take a pan, add desi ghee in it and put on low flame.
  • When ghee melts, add jaggery and water in it.
  • Let the jaggery melt.
  • Transfer this melted jaggery in the bowl carrying rajgira mixture. Better use a strainer so that any impurity in jaggery withholds.
  • Mix the mixture properly & let it cool a bit so that you can touch it with bare hands.
  • Wet your hands & take a small amount of mixture & roll it between your palms. Keep on making round balls with the entire mixture.
