Gud ka paratha | gud paratha recipe | how to make jaggery stuffed paratha is a simple dessert having its roots in the time when the lavish & fashionable sweets were not introduced much to our society.

In our childhood, the meaning of dessert used to be mainly chini ka paratha, gud Ka paratha & kheer. gud ka paratha had less acceptability than chini ka paratha due to warm nature of jaggery. Where chini (sugar) was acceptable throughout the year, gud (jaggery) was demanding during winters only. So we have seen making of gud ka paratha less than of chini ka paratha.

Now the time has changed and kids of today hardly know about these traditional old desserts. They knows only about pies, cobblers, puddings, pastries & donuts etc.

Couple of days ago, our son was carving for something sweet and when we asked him about gud ka paratha, he replied with a jerk, “what, what is that? No..no.. don’t know how it tastes!” We convinced him to go for it assuring good taste.

I remember my grand mother making gud ka paratha with the stuffing of gud only but as it is being made for our son of today’s age, we added few more ingredients including nuts & crafted some designs to make it more attractive & appealing to him.

Served to him with fingers crossed but thanks to almighty, it was approved. Happy we.

It is however suggested to add jaggery wherever possible in your diet during the winter season. It will keep you warm.

Step wise pictorial recipe of gud ka paratha

1. Knead a tight dough of flour with water & make two balls out of it.

2. Roll one ball into a flat roti and keep aside in a plate after dusting some dry flour on plate.

3. Take second ball and roll it too into flat roti.

4. Spread jaggery & coconut. Also sprinkle fennel seeds and crushed almonds, pistachios and cardamom over the roti.

5. By dipping your finger in water, apply water all around the edges of roti.

6. Place the earlier rolled roti over the spreaded mixture making it like a sandwich.

7. Press the sides using a fork & then give an attractive design over the roti. This is purely optional & you can simply press the sides and keep the roti simple. The idea was to make paratha attractive for kids.

8. Cook paratha from both sides by applying desi ghee on hot tawa.

9. Your gud Ka paratha is ready. Serve hot.

NOTES

  1. Use the regular whole wheat flour dough usually kept in refrigerator & no need to knead it separately to make this paratha, as there’s nothing different in the dough needed here.
  2. Roll both rotis to the maximum extent in the beginning only so that after filling jaggery mixture, you need not to roll them again. Otherwise there’s every possibility that paratha will tear while rolling.
  3. Also don’t roll the rotis too much thin. Jaggery with come out easily.
  4. This paratha can be made with just jaggery only. So if you don’t have coconut, fennel seeds, almonds, pistachios or green cardamom, don’t stop making it. Go ahead with jaggery alone. On the contrary, you can add few more nuts of your choice too.

Ingredients
  

  • 1/2 cup whole wheat flour/gheu Ka atta
  • 2 tbsp Gud/Jaggery grated
  • 1/4 tsp Fennel seeds/sounf
  • 1 tbsp coconut/nariyal grated
  • 2 almonds/badam
  • 2 pistachios/pista
  • 1 green cardamom/ilaychi
  • Desi Ghee as per need
  • Whole wheat flour for dusting as per need
  • Water as per need
