Knead a tight dough of flour with water & make two balls out of it.
Roll one ball into a flat roti and keep aside in a plate after dusting some dry flour on plate.
Take second ball and roll it too into flat roti.
Spread jaggery & coconut. Also sprinkle fennel seeds and crushed almonds, pistachios and cardamom over the roti.
By dipping your finger in water, apply water all around the edges of roti & place the earlier rolled roti over the spreaded mixture making it like a sandwich.
Press the sides using a fork & then give an attractive design over the roti. This is purely optional & you can simply press the sides and keep the roti simple. The idea was to make paratha attractive for kids.
Cook paratha from both sides by applying desi ghee on hot tawa.
Your gud Ka paratha is ready. Serve hot.
Notes
Use the regular whole wheat flour dough usually kept in refrigerator & no need to knead it separately to make gud ka paratha, as there's nothing different in the dough needed here.
Roll both rotis to the maximum extent in the beginning only so that after filling jaggery mixture, you need not to roll them again. Otherwise there's every possibility that paratha will tear while rolling.
Also don't roll the rotis too much thin. Jaggery with come out easily.
Gud ka paratha can be made with just jaggery only. So if you don't have coconut, fennel seeds, almonds, pistachios or green cardamom, don't stop making it. Go ahead with jaggery alone. On the contrary, you can add few more nuts of your choice too.
