WHAT ARE MILLETS?

 

Traditionally grown and eaten in Indian subcontinent for the last 7000 years & as such considered as ancient grain, millets are cereal crops and coarse seeds belonging to the grass family.

Highly rich in protein, fiber, vitamins and minerals, millets are gluten free at the same time.

The most popular millets are known by the names :

Jowar (sorghum)
Bajra (pearl millet)
Ragi (finger millet)
Sama (little millet)
Chena/barr (proso millet)
Arke (kodo millet)
Korra (foxtail millet) and
Sanwa (barnyard millet).

SOME PRIME INGREDIENTS USED IN THIS GF VEGAN BROWNIES

 

MILLETS : We have used Jowar (sorghum), Bajra (pearl millet) and Ragi (finger millet) to make this millet flour brownies in the equal proportion.

The named millets were used in the form of flour, which too was homemade.

You can use any any of the millet flour/s and no need to confine yourself to the only 3 mentioned.

However Ragi brownie recipe is the most common type of millet brownie and people love to make ragi brownie with jaggery.

BURA SUGAR : Considered as healthy substitute of refined sugar, bura sugar is processed from best quality of sugarcane and free from chemicals.

Instead you can use brown sugar, shakkar or even refined sugar also.

But in case you are using refined sugar, better to powder it first before using.

OATS MILK : Oats milk is one of the liquid content in the recipe. Again you are not forced to use oats milk only.

To keep your recipe vegan, you can use any other plant based milk.

And if you are not vegan, then you are free to use dairy milk also.

Yes, you can substitute milk with yogurt/curd also.

FLAX SEEDS : Flax seeds played the role of eggs in this recipe. What eggs do to a cake is being done by flax seeds here.

That is why flax powder soaked for some time is called by the name flax egg.

It keeps the cake/brownie soft and works as a binding agent.

Rest oil, baking powder, salt, Cocoa powder, essence and walnuts are the regular Ingredients in any brownie recipe.

HOW TO TWEAK THIS RECIPE?

 

This recipe can easily be tweaked to match with your requirements.

Basically there are three main highlights of the present recipe.

One, this is vegan, free from any kind of dairy.

Second, this is gluten free and

Third & the most vital, it is made with millets.

In case, you have no issues with dairy products, no gluten intolerance and don’t have the millets, then you can follow a simple eggless wheat flour chocolate brownie from this blog. The said recipe is quite close to the present one. Wheat flour can easily be substituted with all purpose flour/maida in the referred recipe.

As millets can be substituted with regular flour, likewise oats milk can be replaced with dairy milk but millets can remain intact. This will convert your recipe to glutenfree chocolate brownie with millets, though not vegan.

Likewise, if you use any plant based milk but substitute millets with any flour, it will become vegan chocolate brownie with millets, though not glutenfree.

Millets are not the last choice and you can make vegan almond flour brownies using almond flour or vegan coconut flour brownies using coconut flour. In both the case, the recipe will remain vegan and glutenfree even without using millets.

There is another class of brownies named vegan chickpea brownie and eggless biscuit brownie recipe made with bourbon biscuits or oreo biscuits, which you can also try, though we have’t put our hands on such totally differnt brownie recipes yet.

Vegan and gluten-free brownie recipe

STEP WISE PICTORIAL RECIPE of Vegan and gluten-free brownies

 

  1. Powder 2 tbsp of flax seeds and add into a small bowl.flax seeds powder
  2. Add 1/4 cup of water to flax powder, mix and keep aside for 15 minutes. This will be our flax egg.flax egg
  3. Take a bowl and add oil, sugar, milk and flax egg. (See notes below)
  4. Whisk them so well.
  5. Add all the 3 flours. (see notes)jowar bajra ragi millet flour
  6. Also add baking powder, salt and cocoa powder.cocoa powder
  7. Mix them well.
  8. Now add a tsp of any of the flour from amongst the 3 to the roughly chopped walnuts. Coating the walnuts with flour prevents the walnuts from sticking to the bottom of baking tin.walnuts
  9. Add walnuts and vanilla essence.vanilla essence
  10. Give it another mix.
  11. Transfer the batter into a baking tin greased with lined butter paper.
  12. Level the batter with spatula and tap the tin to release any extra air.
  13. Bake in preheated oven @180°C/356F for 30 to 35 minutes in the middle rack with both the rods on.baking of millet brownie
  14. After the said period, take the tin out of oven and insert a toothpick in the brownie. If the toothpick comes out clean, it means brownie is perfectly baked.
  15. Let it cool down completely.millet chocolate brownie

NOTES

 

  1. We have used bura sugar which already comes in powdered form. You can use any sugar of your choice but do powder it before using.
  2. We have used 3 types of millet flours. You are not bound to use these particular types only, but any millet flour/s. Be it 1, 2, 3 or more. The only thing need to take care of that the quantity of flour/s should come to 3/4th cup in total.

Ingredients
  

1 cup = 200ml

  • 1/4 cup Finger millet flour/Ragi 45 grams
  • 1/4 cup Sorghum flour/Jowar 45 grams
  • 1/4 cup pearl millet flour/Bajra 45 grams
  • 3/4 cup bura sugar (135 grams) or use any sugar in powdered form
  • 1/2 cup oil 100ml
  • 3 tbsp cocoa powder
  • 1 tsp baking powder
  • Salt a pinch
  • 1 tsp vanilla essence
  • 1/4 cup oats milk or any milk of your choice
  • 2 tbsp walnuts
  • 1 tsp any flour amongst the above 3
  • 2 tbsp flax seeds
  • 1/4 cup water

Instructions

    Ur recipe is good but when I try to bake in microwave convection my cookies did not came out crunchy what is the reason ? I have to flip my cookies for last 10 min. But coming good .in microwave convection my cake came out good . I m home baker .only selling cake . I don’t make cookies also for my kids but always went wrong . I have to buy otg ? Cookies we can’t make in microwave pz answers this
