Savory muffins made without yeast using whole wheat flour, veggies and pizza flavour make these delectable muffins, which you can’t stop at one.

ABOUT THE RECIPE

 

Whenever you hear the name of muffins, the first thought strikes the mind is sweet, soft and cake-y stuff which melts in mouth.

But breaking the barriers, the muffins here are savory, loaded with cheese & bell pepper, seasoned with pizza flavours and smelled heavenly.

Eaten cold or warm, these cute-ies muffins are a perfect little snacks and great to go into lunch boxes.

They can be served as a party snack as  you can prepare them in advance and if wanna serve warm, just pass through microwave.

YEAST FREE RECIPE

 

The best part of the recipe is that yeast free, which makes it really an instant recipe.

You really need not to go through the mess of yeast activation, then hours wait for dough rise and finally after so much of hardship, pizza muffins could be yours.

On the contrary, these muffins get ready under 30 minutes with the given recipe.

CHOICE OF INGREDIENTS

 

This recipe uses very basic ingredients which are common in every kitchen, especially when you are into baking (at home).

But still if you feel that few aren’t going comfortable with you, you can easily put their substitutes:

WHOLE WHEAT FLOUR :

 

Wheat flour makes these muffins, a healthy snack.

However you can use all purpose flour or a mix of both in the equal proportion.

GARLIC POWDER :

 

We understand that garlic powder is not something which everyone keeps in their pantry.

Even we never had this powder until we had to make Cajun potatoes.

To make cajun potatoes, we made garlic powder at home.

In case you don’t have an asses to garlic powder and don’t have enough time for making the same, just crush 2-3 cloves of garlic and add to the dough. Simple.

Also you can skip garlic if you have restrictions to consume it.

ONION :

 

The position of onion is similar to garlic with respect to this recipe.

Either use onion powder or fresh onion.

We also made onion powder for cajun potatoes but by now, it was all finished. So added the fresh onion after chopping finely.

TOMATO KETCHUP :

 

If you have pizza sauce at home, then prefer to use it over tomato ketchup.

Pizza sauce, as the name in itself has pizza, is more subtle in the recipes having pizza definition.

BELL PEPPER :

 

Called by the name Capsicum in Asia, we have used all of it’s varients ie red, yellow and green.

You need not to be very strict to it in case you have only one color. Go for it only.

SWEET CORNS :

 

We have added the frozen sweet corns which are ready to go into a recipe.

If you too wanna corns but don’t have the frozen one, then just boil the corns you have and then use.

 

MILK :

 

Milk is the one ingredient in the recipe whose measurement can’t be ascertained.

It is to be added as much as your batter calls for.

Now for the milk’s replacement, here comes the water.

Though we haven’t tried it with water personally, but saying so on the basis of the recipe of water muffins, which we had made, of course, with water. And that came out awesome.

LIBERTY WITH THE VEGETABLES 

 

You have the choice to add any veggies you like, what you usually love for you regular pizza.

Artichoke, bell pepper, Red Onion, cherry tomatoes, carrots, olives and many more….can be all your’s.

 

VEGAN OPTIONS

 

There are only 2 dairy products used in the recipe and they are mozzarella and milk.

This recipe can easily be transformed into vegan by replacing dairy mozzarella with vegan mozzarella and plant based milk or water, as already suggested.

STEP WISE PICTORIAL METHOD OF PIZZA MUFFINS RECIPE

 

PREPARATION OF INGREDIENTS

 

  1. Cut bell pepper into small pieces. We have used the bell pepper of all three colours – red, yellow and green. If you have only green, it’s fine.
  2. Grate Mozzarella cheese or you can use the shredded mozzarella.
  3. Chop onion very finely.
  4. Grease muffin tins with oil.
  5. Switch on the oven @170°C/338F for 10 minutes for preheating.

MAKING OF BATTER

 

  1. Take a bowl and place sieve over it.
  2. Add whole wheat flour, baking soda, baking powder and salt.
  3. Sift the ingredients into a bowl.
  4. Add mix herbs, oregano, garlic powder, red chilli flakes, onion, yoghurt, tomato ketchup, oil, mozzarella cheese, bell pepper and sweet corns.
  5. Mix all the ingredients.
  6. Now begin to add milk, less at a time.
  7. When you get a thick batter, stop.
  8. Using a spoon, add batter into the greased muffin tins filling them till 3/4th.

TOPPING

 

  1. When all the muffin tins are filled, top them with some mozzarella cheese and bell pepper.
  2. Sprinkle some mix herbs, red chilli flakes and black pepper powder.

BAKING

 

  1. Bake @170°C/338F for 25 to 30 minutes in the middle rack of the oven with both the rods on.
  2. Once done, bring them out and insert a toothpick. If it comes out clean, means muffins are properly baked.
  3. Take muffins out of muffin tins.

Enjoy warm with a cup of tea.

  1. In case you don’t have garlic powder, take 2 garlic cloves and crush them very finely and then add.
  2. If you have onion powder, you can add 1 tsp of it instead of fresh onion.

1 cup = 200 ml

    FOR MAKING BATTER

    • 1 cup whole wheat flour 160g/5.64 oz
    • 1 tsp baking powder
    • 1/4 tsp baking soda
    • 1 tsp salt
    • 1/2 tsp mix herbs
    • 1 tsp oregano
    • 1/2 tsp garlic powder see notes below
    • 1 tsp red chilli flakes
    • 2 tbsp onion finely chopped - see notes
    • 4 tbsp yoghurt
    • 2 tbsp tomato ketchup or pizza sauce
    • 2 tbsp oil
    • 3/4 cup mozzarella cheese 100 gram/3.52 oz
    • 1/2 cup bell pepper mixed - green, yellow, red/60 gram/2.11 oz
    • 1/4 cup sweet corns 32 gram/ 1.1 oz
    • 3/4 cup milk 150ml/more or less

    FOR TOPPING

    • 1/2 cup mozzarella
    • 1/4 cup bell pepper mixed
    • few Mix herbs
    • few Red Chilli flakes
    • some Black pepper powder

        Depends that how much ahead of time? Obviously you can make them but they may loose their freshness with time. So better to finish them in a day or two. Thank you
