Vegan and Gluten free Chocolate brownies with millets is the healthy substitute of regular brownies made using all purpose flour and refined sugar.

Ingredients
  

1 cup = 200ml

  • 1/4 cup Finger millet flour/Ragi 45 grams
  • 1/4 cup Sorghum flour/Jowar 45 grams
  • 1/4 cup pearl millet flour/Bajra 45 grams
  • 3/4 cup bura sugar (135 grams) or use any sugar in powdered form
  • 1/2 cup oil 100ml
  • 3 tbsp cocoa powder
  • 1 tsp baking powder
  • Salt a pinch
  • 1 tsp vanilla essence
  • 1/4 cup oats milk or any milk of your choice
  • 2 tbsp walnuts
  • 1 tsp any flour amongst the above 3
  • 2 tbsp flax seeds
  • 1/4 cup water

Instructions
 

  • Powder 2 tbsp of flax seeds and add into a small bowl.
  • Add 1/4 cup of water to flax powder, mix and keep aside for 15 minutes. This will be our flax egg.
  • Take a bowl and add oil, sugar, milk and flax egg. (See notes below)
  • Whisk them so well.
  • Add all the 3 flours. (see notes)
  • Also add baking powder, salt and cocoa powder.
  • Mix them well.
  • Now add a tsp of any of the flour from amongst the 3 to the roughly chopped walnuts. Coating the walnuts with flour prevents the walnuts from sticking to the bottom of baking tin.
  • Add walnuts and vanilla essence.
  • Give it another mix.
  • Transfer the batter into a baking tin greased with lined butter paper.
  • Level the batter with spatula and tap the tin to release any extra air.
  • Bake in preheated oven @180°C/356F for 30 to 35 minutes in the middle rack with both the rods on.
  • After the said period, take the tin out of oven and insert a toothpick in the brownie. If the toothpick comes out clean, it means brownie is perfectly baked.
  • Let it cool down completely.
  • Brownie is ready. Invert, cut into pieces and enjoy.

Notes

  1. We have used bura sugar which already comes in powdered form. You can use any sugar of your choice but do powder it before using.
  2. We have used 3 types of millet flours. You are not bound to use these particular types only, but any millet flour/s. Be it 1, 2, 3 or more. The only thing need to take care of that the quantity of flour/s should come to 3/4th cup in total.
