sev papdi recipe | sev puri | indian papdi chat recipe is one of the most loved street food usually available with the reharis selling gol gappe. Actually this recipe of sev papdi is being prepared differently at different places.
Mostly it is prepared simply by topping boiled potato cubes, chopped onion,green chutney, dates and tamarind chutney, tomatoes, sev with a generous sprinkle of chat masala over flat or puffed puris.
Flat one are called papdis whereas puffed one are named as puris. Somewhere yogurt is spread over on the top.
Earlier also, we have made this papdi but in our own way. With a slight alteration in the ingredients and change in the choice of chutneys, this was simply a blast.
We used tomato ketchup and imli aur pyaz ki chutney in place of tamarind chutney and anardana chutney instead of green chutney.
This time we have used the exact chutneys suggested for this recipe i.e tamarind chutney and green chutney.
In our city, there is no used of curd in sev papdi so we didn’t add it. It was really delectable and everyone was gobbling them like anything. But alas! 15 were too less for we 3. Next time we are going to double or even triple the ingredients..lol
As these bhalle carry their value only when served with chutneys, so don’t skip the recipe of both GREEN CHUTNEY & TAMARIND CHUTNEY.
Step wise pictorial method of sev papdi recipe
Firstly prepare the potato masala.
- Mash potatoes in a bowl.
- Add all the ingredients mentioned under the head “For potato Masala”. Keep aside.
Now begin with the process of making sev papdi.
- Just before serving, arrange papdis on a serving plate. Either use whole wheat papdis or besan papdis (for glutenfree version), choice is yours.
- Apply Ketchup to all the papdis.
- Mix mashed potatoes and rough chopped onion and place a tsp of it on each papdi. Press it so that this potato mixture sticks to the papdis.
- Top it further with 1 tsp of tamarind chutney and 1 tsp of mint chutney (or green chutney).
- Sprinkle some chat masala and sev over each papdi.
- Garnish each papdi with a mint leaf.

NOTE
Prepared all the ingredients before hand. but you are suggested to assemble everything over and above the papdis just before serving. If you will prepare sev papdi much prior to serving, they will loose their crunch.

Ingredients
1 cup = 200 ml
For potato masala
- 1/4 cup Potatos boiled
- 1/4 Cup Onions finely chopped
- 1/4 tsp Red chilli powder or flakes
- 1/4 tsp Coriander powder
- 1/4 tsp Garam masala powder
- 1/2 tsp Chat Masala
- 1 tbsp Coriander leaves chopped
- salt as per taste
For sev papdi
- 12 Papdis
- 1/4 cup Tomato ketchup
- Potato masala already prepared
- 12 tsp Mint chutney
- 12 tsp Tamarind chutney
- 3/4 cup Sev
- Few leaves of mint for garnishing.
Instructions
- Just before serving, arrange papdis on a serving plate. Either use whole wheat papdis or besan papdis(for glutenfree version), choice is yours.
