WHAT IS RED SAUCE PASTA?

Red sauce pasta also named as Arrabbiata is a pasta recipe cooked in a tomatoes based gravy and as pasta gets coated with red gravy/sauce due to cooking with tomatoes, it is named as red sauce pasta.

WAYS TO COOK

Red sauce pasta is being cooked in different ways as far as ingredients are concerned. People do add vegetables of their choice especially capsicum. Adding onion too is the priority of many.

But what we are sharing here is the most simple and basic recipe with no frills. This easy recipe is helpful in getting this pasta ready in very less time and you can make it on just one call of your kids.

As it has no onion, no vegetables, which requires extra cooking time, so you can call it instant red sauce pasta and/or red sauce pasta without vegetables. Though making pasta in red sauce with vegetables is a healthy choice, but when they are not available or wanna be quick, this recipe is there.

Furthermore, if you have cheese and your kids love it, you can make creamy red sauce pasta recipe just by adding some of the cheese.

The other difference in the way of adding tomatoes. Most of the pasta sauces are cooked by first boiling the tomatoes and then removing their skin. Only then they are added to pasta for making sauce which is undoubtedly time consuming because we have experienced the same while preparing pav bhaji and nutri kulcha.

But making tomatoes puree ask for no time. Just blend tomatoes and you are done. And this doesn’t make any difference in the taste too.

CHOICE OF PASTA

Pasta is a staple food of Italy & comes in different shapes, sizes and names like pappardelle, ruote, fettuccine, jumbo shells, rigatoni, fusilli, angel hair, macaroni, farfalle (bow ties),  spaghetti, rotini, linguine, orecchiette, orzo, flat, long noodles, penne, wagon wheels, shells & ziti and few more.

You will find the pasta made of durum wheat flour as well as of semolina. Also some pasta have rice flour or lentils as a key ingredients.

To make red sauce pasta, generally this is penne pasta which is being chosen for the simple reason is it’s small cylindrical shape cut at an angle. Penne pasta goes well with thick sauces as they sneak into the tube shape of the pasta giving it a juicy and delightful taste.

We didn’t have this particular shaped pasta so tried with fusilli, what we had in hand. And believe, this too turned out to be awesome.

IMPORTANT TIP

This might be known to many but still sharing an important tip for those who are unaware about. As a general method, we do pass cold water through the boiled pasta so that it’s cooking process stops.

We too used to follow the same step and you must have noticed the same in our another white sauce pasta recipe. But recently we have learnt that passing cold water also takes away the necessary starch from the pasta which do affects the taste and texture of pasta.

In the present recipe, we avoided the said step and the results were a way wonderful.

So now onwards, this step needs to be abandoned for tastier and lips lacking pasta recipe.

Step wise pictorial recipe of how to make Red sauce pasta without vegetables

  1. Pour water in a pan and add oil, salt & water.pasta red sauce recipe
  2. When water begins to boil, add pasta in it.creamy red sauce pasta recipe
  3. Let pasta simmer for 7 – 8 minutes or until al dente cooked (cooked as to be still firm when bitten.) While simmering, do stir it at intervals so that pasta doesn’t stick to bottom.spicy red sauce pasta recipe

  10. Add boiled pasta and salt. Mix well.

NOTES

  1. Use firm and deep red tomatoes to make puree, otherwise pasta will have dull red colour.
  2. Don’t use sour tomatoes otherwise pasta will turn out to be extra tangy.
  3. You may sprinkle some parmesan cheese/grated processed cheese on top.

Ingredients
  

FOR BOILING PASTA

  • 150 gram pasta roughly 1.50 cup
  • 1/2 tsp salt
  • 1 tsp oil
  • 4 cup water

FOR RED SAUCE

  • 1 cup tomato puree
  • 2 tbsp garlic roughly chopped
  • 1/2 tsp red chilli flakes
  • 1 tbsp mixed herbs
  • 1/2 tsp oregano
  • 1/4 black pepper powder
  • 1 tsp dry basil leaves
  • 2 tbsp tomato ketchup
  • Salt to taste
  • 1 tsp sugar

Instructions
