Made without eggs and using whole wheat flour, this easy mango cookie recipe melts in mouth and promises utmost deliciousness and flavors in your mouth beginning with the first ever bite.

INGREDIENTS USED IN MAKING MANGO BISCUIT RECIPE

If you give a look at the list of ingredients, you will find it very basic, very general available in every kitchen.

BUTTER : Butter provides a fat content to the recipe. You can also use salted butter but never replace butter with oil.

MANGO PUREE : To make mango puree, just blend mango pulp into a blender. More ripe the mango is, more sweet it will be and then you need to adjust the sugar accordingly. However you can use canned puree also.

FLOUR : Whole wheat flour is a better choice when it comes to healthy baking, so we always prefer this flour over All purpose flour. However feel free to use refined flour.

SUGAR : Whichever sugar you are using, prefer to use in powdered form. In place of sugar, you can use Jaggery powder too.

CORN FLOUR : It helps in making the cookies tender and crumbly.

BAKING POWDER : This is the leavening agent which also helps in making the cookies crunchy.

CARDAMOM ESSENCE : First preference should be given to mango essence and if it is not available to you, then go for cardamoms, either in the form of essence or crushed one.

FOOD COLOUR : Food colour is optional and is added just to make the cookies appealing. However it is purely optional.

 

 

STEP WISE PICTORIAL RECIPE OF MANGO COOKIES RECIPE EGGLESS

 

  1. Add butter and powdered sugar in a bowl.
  2. Whisk them to creamy. If you don’t have electric beater, use hand blender.
  3. Add mango puree and whisk it too.
  4. Then add wheat flour, corn flour, baking powder, cardamom essence and yellow food colour.
  5. Mix everything well but don’t knead it like a dough.
  6. Make small balls out of the dough and arrange them on a baking tray lined with greased butter paper.
  7. Mark any design of your choice on the cookies. We used hand whisk to create a design. However you can leave the cookies just plain by slightly pressing them.
  8. Put the tray in refrigerator for 30 minutes.
  9. Then bake in a pre-heated oven @180°C for 20 minutes in the middle rack with both the rods on
  10. Bring them out and let them cool completely.

Ingredients
  

1 cup = 200 ml

  • 1/3 cup butter (5 tbsp + 1 tsp)
  • 1/4 cup Mango puree (66 gram)
  • 1.5 cup whole wheat flour (235 gram)
  • 3/4 cup powdered sugar of your choice (178 gram - we used bura sugar)
  • 2 tbsp corn flour
  • 1/2 tsp baking powder
  • 1 tsp cardamom essence or cardamom powder or mango essence
  • Few drops of yellow food colour (optional)

Instructions
