Karela, which is called Bitter Gourd in English is often made by stuffing, at times with whole ingredients but more commonly with just powdered spices.
But whatever be the stuffing, the common practice is to cook them in ample of oil, almost equivalent to deep frying.
But here today, we are going to make crispy stuffed karela in air fryer using minimal oil.
There might be few who can think that 2 tbsp of oil is also too much and hence the core purpose of Air Fryer is failed. But let us tell that 2 tbsp oil is still too less in comparison to the amount of oil karelas soak on deep frying.
But the main purpose of bringing this post is not to talk about the quantity of oil but to meet the problem of many who says their karela turns dry and hard whenever cooked in Air Fryer.
Why Does Karela Turn Dry and Hard in the Air Fryer?
Karela can turn dry and hard in the air fryer mainly because:
1. Low moisture content
2. High temperature
3. Over cooking and
4. Insufficient oil.
How to Keep Air Fryer Bharwa Karela soft and tender?
DO NOT SOAK FOR A LONG IN SALT :
People often soak karela in salted water to get rid of bitterness. Soaking in salt tends to remove moisture from karela and hence they turn out to be dry and hard.
So it is suggested either not to soak the karela in salted water. But in case you can’t handle the slight natural bitterness of karela, them don’t soak for too long and do not squeeze karela too much. After soaking karela in salted water, just rinse them well.
DO NOT AIR FRY ON HIGH TEMPERATURE:
Excessive heat cooks the exterior too fast but till then, inside hasn’t achieved the requisite softness. Then to cook the karela from inside as well, you need to air fry it longer which results in loss of moisture. And when the moisture is lost, karela is supposed to turn hard and dry.
So do not keep the temperature too high. 160 or 180°C are the ideal temperatures.
DO NOT OVERCOOK
Overcooking dries and hardens karela because the longer it stays in hot circulating air, the more internal moisture it loses.
USE SUFFICIENT OIL
Do not think that just because you are cooking in Air Fryer, you don’t need an oil. Lack of sufficient oil in karela turns them hard and dry, and this is so obvious.
This is alright that we shouldn’t use as much quantity of oil that it turns out to be a karela equal to deep fried one. But yes, sufficient oil should be there. Oil keep the karela soft even when most of it’s moisture is lost.
So in nutshell, if you want your air fryer kaelas to be soft and moist enough, focus more on gentle cooking than crisping. Air fry until tender rather than overly browned. This helps preserve flavor, softness and better texture.
So let’s cook bharwa karela recipe with less oil in Air Fryer.

Peel the skin of bitter gourd. Wash them well. Slit vertically making a kind of pocket. Keep aside. If some karela is too long, divide into halves and then slit.
Take cumin seeds, spicy red chilli powder, kashmiri red chilli powder, coriander powder, turmeric powder, garam masala, dry mango powder, salt and magic masala. Then add mustard oil which is already cooked to smoking point. Give them a good mix. Masala is ready.
Open the cavity/pocket of each karela and fill the masala. Also apply bit of masala on the outer side of bitter gourd as well. Place all karelas in the air fryer basket. Air Fry @180°C for 15 minutes. Turn the sides of each karela using a tong. Air Fry again at the same temperature for 15 minutes more.

NOTES
- Although it is an Air Fryer recipe, but don’t go for oil in just drops. Too much less oil is the reason for hard and dry karelas. Afterall, we are not deep frying.
- Over Air Frying is the another reason karela become hard and dry. So Air Fry only until they are properly cooked.
- If you don’t have Air Fryer, this recipe can be made in a pan as well but with little extra oil.

Ingredients
- 500 gram bitter gourd
- 1 tsp cumin seeds
- Spicy red chilli powder to taste

- 1 tsp coriander powder
- 1/4 turmeric powder
- 1/2 tsp garam masala
- 1 tbsp Dry mango powder
- Salt to taste
- 1 tbsp Magic Masala (optional)
- 2 tbsp mustard oil (cooked)
Instructions
