Bharwa Karela in Air Fryer | Air Fryer Bharwa Karela Recipe | Stuffed Bitter Gourd with Minimal Oil

Crispy outside, tender inside, Bharwa Karela in Air Fryer makes a healthier, flavorful twist on traditional stuffed bitter gourd.

Ingredients
  

  • 500 gram bitter gourd
  • 1 tsp cumin seeds
  • Spicy red chilli powder to taste
  • 1 tsp Kashmiri Red chilli powder
  • 1 tsp coriander powder
  • 1/4 turmeric powder
  • 1/2 tsp garam masala
  • 1 tbsp Dry mango powder
  • Salt to taste
  • 1 tbsp Magic Masala (optional)
  • 2 tbsp mustard oil (cooked)

Instructions
 

  • Peel the skin of bitter gourd.
  • Wash them well.
  • Slit vertically making a kind of pocket. Keep aside. If some karela is too long, divide into halves and then slit.
  • Take cumin seeds, spicy red chilli powder, kashmiri red chilli powder, coriander powder, turmeric powder, garam masala, dry mango powder, salt and magic masala.
  • Then add mustard oil which is already cooked to smoking point.
  • Give them a good mix. Masala is ready.
  • Open the cavity/pocket of each karela and fill the masala.
  • Also apply bit of masala on the outer side of bitter gourd as well.
  • Place all karelas in the air fryer basket.
  • Air Fry @180°C for 15 minutes.
  • Turn the sides of each karela using a tong.
  • Air Fry again at the same temperature for 15 minutes more.
  • Air Fryer Stuffed Karela is ready.
  • Enjoy.

Notes

  1. Although it is an Air Fryer recipe, but don't go for oil in just drops. Too much less oil is the reason for hard and dry karelas. Afterall, we are not deep frying.
  2. Over Air Frying is the another reason karela become hard and dry. So Air Fry only until they are properly cooked.
  3. If you don't have Air Fryer, this recipe can be made in a pan as well but with little extra oil.
