Dabara is one such name which is associated with the streets of Jammu part of Jammu and Kashmir.
These are basically the spiced potato patties coated in gram flour batter and deep fried to golden brown.
This recipe is bit close to Aligarh special Aloo Barule with little differences. In aloo Barule, whole baby potatoes are used and they remain as it is. On the other hand, in Dabara, potatoes are boiled, mashed and thereafter they turn into patties.
Coming back to Dabara, it not that street food which is sold in every nook and corner of the street or something being sold by mobile vendors like kulcha chole or nutri kulcha.
The shops which sell samosas, gurgulle or pakode sells the dabaras also. Be it summers, winters or monsoons, dabara is something people love to have it any season of the year.
Unlike most of the street foods, the best part of the recipe is that it calls for very minimal ingredients and have no onion and garlic. Even the spices are very basic and commonly available in every Indian household.
With the besan coating outside, this street food is crispy outside and soft inside.
Yes, please don’t confuse it with aloo tikki. Be it the taste or look, both are altogether different.
If talking about the chutney with which it is served, it is hard to say that which particular one should be served because mostly the chutney varies from vendor to vendor.
Muli ki chutney, green chutney, anardana chutney, imli pyaz ki chutney or meethi chutney, you may find variety of chutneys varying from shop to shop.
STEP WISE PICTORIAL RECIPE OF JAMMU SPECIAL DABARA RECIPE
MAKING OF BESAN BATTER
Add besan, carom seeds and salt in a bowl. Be careful, potato patties too have salt.
Slowly add water while whisking.
Make a batter which is neither too thin nor too thick. Keep aside.
MAKING OF DABARA
Grate boiled potatoes.
Add ginger, green chilies, coriander seeds, cumin seeds, red chilli powder, garam masala, amchur, hing and salt. Be careful, besan batter to have salt.
Mix everything together. You need not to make a dough.
Now take a small portion and assemble it like a pattie. However you need to worry about uneven edges because dabara is like this only.
Make all the patties.
Dip each one in besan batter and immediately take it out otherwise the pattie will break.
Put it in the pan having some hot oil.
Shallow fry on medium heat till brown from both sides.
Take them out and enjoy hot.

Ingredients
1 cup = 250 ml
FOR BESAN BATTER
- 1 cup gram flour/besan
- Salt to taste
- 1/2 tsp carom seeds/ajwain
- Water as required
FOR MAKING DABARE
- 4 boiled potatoes (medium sized)
- 1 tbsp ginger (grated)
- 2 green chilies (chopped)
- 1 tbsp coriander seeds
- 1 tsp cumin seeds
- Red chilli powder to taste
- 1 tsp garam masala
- 1 tbsp amchur/dry mango powder
- Pinch of hing/asafoetida
- Salt to taste
- Oil for frying
