South Indian peanut rice | Peanut rice | Groundnut masala rice with step wise pictorial and video recipe.

ABOUT PEANUT RICE

 

Vegan and Gluten-free, Peanut rice is a spicy, delicious and flavourful delicacy from south india made with roasted peanuts, rice and few little spices.

In addition to Peanut rice, these rice are also named as groundnut Masala rice and verkadalai sadam in regional language.

Verkadalai means Peanut and Sadam stands for cooked rice.

These rice is also served in couple of south indian temples as nivedyam and prasadam.

UTILITY OF LEFTOVER RICE

 

Earlier also we have made certain recipes wherein leftover rice are used or can be used like veg fried rice, Curd rice, Lemon rice and Coconut rice recipe.

The best part of this recipe is that it utilises the rice left from previous day and usually served as breakfast or lunch.

Though it is not a bar to cook groundnut rice and you can always make it with freshly made rice also.

But make sure rice shouldn’t be sticky. Also, if making with fresh rice, then let rice turn cool before using.

PRESSURE COOKER OR INSTANT POT COOKING

 

No, not at all. You don’t require both these appliances to make such rice and gives the best result in open pan only.

If you ever try these rice either in pressure cooker or IP, you won’t get that authentic taste and loose that crunch of peanuts and dals.

APPROPRIATE FOR PACKING

 

Either it is the lunch box of kids or elders, this is the perfect recipe to go in.

But if making for kids, make sure about the quantity of dry red chillies your kids can accept.

Also they are perfect to go in your picture menu. Even if they turn cool, still tastes amazing.

SERVING SUGGESTIONS

 

Peanut rice are so delicious that you really don’t need any accompaniment with this but if you like, you can pair it with yoghurt or raita.

STEP WISE PICTORIAL RECIPE SOUTH INDIAN PEANUT RICE

 

MAKING OF MASALA POWDER

 

  1. Pour oil in a pan and add cumin seeds, urad dal, chana dal and peanuts. Saute till both dals and peanuts turn slightly brown.
  2. Add sesame seeds and dry red chillies. Saute for couple of seconds
  3. Add coconut and saute till coconut turns slightly brown and fragrant
  4. Remove the pan from heat and let the mixture turn cool completely
  5. Grind the mixture to a fine powder. Keep aside.

MAKING OF PEANUT RICE

 

  1. Take oil in a pan and add mustard seeds, curry leaves and peanuts. Saute till mustard splitter and peanuts turn slightly brown.
  2. Add cooked rice, masala powder (initially prepared) and salt. Mix well
  3. Cover the pan with a lid and let it simmer for 5 minutes.
  4. Peanut rice are ready.

If you have already roasted peanuts, then no need to roast them again.

Ingredients
  

MAKING OF MASALA POWDER

  • 1 tsp oil
  • 1 tsp urad dal black gram skinned
  • 1 tsp chana dal split chickpeas
  • 1/2 tsp cumin seeds
  • 1 tsp sesame seeds
  • 3 dry red chillies
  • 2 tbsp peanuts
  • 2 tbsp coconut grated

MAKING PEANUT RICE

  • 2 tsp oil
  • 1 tsp mustard seeds
  • 8-10 curry leaves
  • 2 tbsp peanuts
  • Salt to taste
  • Masala already made
  • 2 cup rice cooked
