Vegan burnt garlic mushroom fried rice recipe with step wise pictorial and video method.

Vegan, Glutenfree and one pot meal, burnt garlic mushrooms fried rice is an indo Chinese recipe made with golden fried garlic, mushrooms and leftover rice with few more little basic ingredients.

Some guests joined us at our home yesterday for a dinner and besides many other dishes, these rice were also part of dinner table.

They all were relishing the food but one of them was not taking rice and was eating naan only.

On being asked why he’s not taking rice, he replied that he doesn’t like rice in any form and especially not in the dinner time.

On being insisted to try a bit of them as these are garlic rice which are easy to digest and also very delicious, he took a spoonful of them.

Initially took just a spoonful, but to our utter surprise, he had some more and that too not just once but twice.

He didn’t wait for the dinner to finish and started asking that how these delicious rice are prepared? He wanted his wife to prepare the same for the party they are supposed to throw in coming days.

WHAT IS BURNT GARLIC?

 

Sauteeing the garlic till it becomes deep or golden brown defines burnt garlic.

Do note that when the word “Burnt” is contained in the title/name of the recipe, don’t take the dictionary meaning of the same..lol

Make sure your burnt garlic should be crisp & brown on higher side and not literally black as if totally damaged and turned bitter.

ABOUT THE PRESENT FRIED RICE RECIPE

INGREDIENTS USED IN MAKING THESE FRIED RICE

 

SESAME OIL : also called Gingely oil, this is extensively used in Chinese Cooking. Sesame oil has a slightly nutty taste which goes well in making stir-fried dishes.

In case you don’t have the sesame oil, then add whatever oil you use in your routine cooking. And add a bit of sesame seeds in Cooking.

Again, if you don’t have sesame seeds too, still don’t worry. Your regular oil is enough. Rest assured.

GARLIC : This recipe is all about garlic flavour. You can increase or decrease the quantity of garlic as per your own taste and liking.

If you wanna make your rice more garlic-y, then stir fry extra garlic in the beginning. Take some of them out and when you are done with cooking these rice, sprinkle that taken out garlic from the top.

MUSHROOMS :  Button mushrooms are used in this recipe. However, you can make these rice with cremini mushrooms or shiitake mushrooms or by combining various varieties of mushrooms.

SPRING ONION : spring onion has two parts, white and green. They go well in any fried rice recipe and shouldn’t be skipped.

RICE : whatever rice you are using, making sure they shouldn’t be such which turns soft and stick together.

You can use medium to long grain rice which holds their shape and remain fluffy & fall apart while stir frying.

This is the reason in most of the stir fried rice recipes, leftover rice are preferred. But in case you don’t have the leftover rice and still want to relish such recipe, you have the way out.

Make fresh rice, spread them in a wide tray or plate and place in refrigerator for atleast 30 minutes. Now they are your kind of rice. Yippee.

SEASONING : either it be salt, black pepper, soya sauce or vinegar, they are part and parcel of fried rice and you can’t imagine that authentic taste in case even if one is missing.

But while adding salt, keep one thing in mind. Soya sauce too has some salt in it. Understood?

HOW TO SERVE FRIED RICE?

 

Serve these rice hot with a gravy dish like veg manchurian or chilli paneer.

However they taste so amazing that you can eat them as it is.

  1. Take oil in a wok or pan. (See notes below).
  2. Add garlic and let it turn deep/golden brown.
  3. Add onion whites and saute till turns slightly brown (notes).
  4. Now add Mushrooms and saute for a minute.
  5. Add rice, salt, black pepper powder, soya sauce and vinegar. Mix well. (notes).
  6. Burnt garlic mushrooms fried rice recipe is ready.

  1. If you don’t have sesame oil, no issues. Use any oil you have. In such a case, add 1/2 tsp of sesame seeds for sesame flavour.
  2. In addition to onion whites, you can also add a tbsp of red onion.
  3. You can easily skip mushrooms from this recipe. In that case, this recipe will be titled as ‘ burnt garlic fried rice’ omitting mushrooms.
  4. We have used day old leftover rice in this recipe. You can also use the fresh rice, but they must be completely cool. Prefer the refrigerated rice.

  • 2 tbsp sesame oil
  • 4-5 garlic cloves chopped
  • 1 cup Button Mushrooms thinly sliced
  • 2 tbsp spring onion whites chopped
  • 1 tbsp spring onion greens little extra for garnish
  • 2 cup cooked rice
  • 1/2 tsp black pepper powder
  • Salt to taste
  • 2 tsp soya sauce
  • 1 tsp rice vinegar

Instructions
