Ghee residue is such a versatile ingredient that one can make numerous recipes with it. Be it sweet or  savoury, ghee residue accommodates itself everywhere.

It has the taste and texture similar to khoya/mawa so you can comfortably replace khoya with ghee residue in any recipe.

Yes, you need to keep few things in mind while replacing khoya with residue or using residue in any recipe :

1. Ghee residue has uneven colour traces. Means it is mix of brown and black burnt marks. So will be the look of your recipe, as you can see the pedas in this post.
If you find your recipe looking bad due to black traces, you can coat, in case of ladoo, barfi or these pedas, them with desiccated coconut or powdered sugar. Even silver leaf/chandi ka warq can be used to make a veil.

2. Always taste ghee residue before using. If it is free from burnt smell & taste or has not turned sour, don’t make recipe out of it.

Step wise pictorial recipe of leftover desi ghee residue peda

 

  1. Take a blender and add sugar & cardamoms in it.
  2. Blend to a fine powder. Keep aside.
  3. Also blend ghee residue separately to break any lumps or crystals formed.
  4. Take a pan or kadai and add ghee residue in it.
  5. Roast on a low flame till reside turns hot and begins to release ghee out of it.
  6. Remove the pan from heat and let the residue turn a bit cool.
  7. Mix powdered sugar well.
  8. As the mixture is luke warm, take a small piece of mixture and roll it between your palms.
  9. Slightly flatten it to give a shape of peda.
  10. Finish the entire mixture likewise.
  11. Ghee residue peda is ready.

NOTES

  1. Do note, don’t add powdered sugar while residue is very hot. Otherwise it will become like a halwa which you will not be able to bind later.
  2. Instead of sugar, you can also used powdered jaggery.
  3. Quantity of sugar will vary depending on the quantity of ghee residue you are left with. So apply your judgment.
  4. As the ghee residue is already roasted much (while ghee was in making process), so don’t roast it much again. Just need to make it hot so that you can bind easily.
  5. If mixture is dry and finding difficulty in binding, add bit of warm milk. It will help.
  6. If mixture is too loose and finding difficulty in binding, keep it in refrigerator for some time. Will be easy to bind then.
