Paneer” is for vegetarians only and for vegans, it was only “Tofu” so far, which is the byproduct of Soy. 

But now, it is not just Tofu but Vegans also have “Vegan Paneer made from watermelon seeds”.

This recipe of vegan paneer without tofu has become popular on social media now a days. After seeing that, we have tried plant based paneer recipe and the results were like OMG.

Made with just 2 ingredients, i.e. watermelon seeds and water, this high protein vegan paneer recipe is rich in nutrients, contains healthy fat and minerals such as magnesium and iron.

This watermelon seed cheese recipe is a great recipe for those, who are vegans but looking for a soy-free alternative to tofu.

This  homemade watermelon seed vegan paneer has such a beautiful texture and taste was like absolute Paneer. Yes we repeat, it was absolutely paneer. Same softness, same nuttiness and same capacity to absorb the surrounding flavours so well.

If you ask how to use this easy watermelon seed vegan paneer recipe, the simple answer is…. exactly the way you use paneer or tofu. Period.
   
So herein below, just go through how to make vegan paneer from watermelon seeds.

Take watermelon seeds in a bowl and add enough water.

Cover and soak for 6 hours or overnight. 

Thereafter drain them and discard that water.

Now time to grind the soaked watermelon seeds with 4 cups of water. If your grinder jar is big enough, do it in one go, otherwise in batches.

We did it in 3 batches and made a very fine puree.

Place a sieve on a bowl and spread some clean cloth on it.

Pour the watermelon seeds puree.

Squeeze the cloth so well so that we get the maximum milk out of it.

Transfer the watermelon seeds milk in a pan.

Put it in low to medium heat.

Keep stirring occasionally otherwise milk may stick to the bottom of the pan.

Once the milk heats up well, you will find that it begins to curdle on it’s own.

Keep boiling so that milk solids separate completely.

Again spread a cloth on a sieve.

Pour curdled milk onto the cloth.

All the water will drain down into the bowl and milk curds will be collected in the cloth.

Squeeze the cloth so well so that there remains least moisture in curds.

Properly enroll the cloth and put some heavy weight on it to get rid of moisture for 30 to 45 minutes.

Vegan paneer is ready. No specific recipe. Cook it the way paneer/tofu is cooked. We have made Vegan Paneer Mushroom dry Curry

NOTES

  1. Do not discard the leftover okara which gets collected in a cloth after squeezing out the seeds milk. It can be kneaded with the dough or use as a paratha stuffing.
  2. Also, do not discard the whey. It can be used in cooking rice, lentils, vegetables or kneading dough. 
  3. Do not put the milk curds under pressure for too long. The vegan paneer will come out too crumbly.
