Whenever the words ‘white sauce’ come across, the first thing strikes to the mind is “pasta” or some kind of continental bake. But to your utter surprise, this time it’s neither pasta nor any continental bake, but our very own good old mixed veggies.
Undoubtedly there are lot many ways to use the mix veggies lying in your fridge but they are the common and straightforward like mix veg sabji, pav bhaji, upma and many more but believe us, this mix veg in white sauce hits differently.
It’s an amalgamation of basic veggies with the western white sauce and inspite of being so royal, it is something that’s comforting yet light and healthy.
This recipe, especially the white sauce portion is inspired by our own vegan white sauce pasta in which we made the sauce with cauliflower.
Generally vegan white sauces are based on plant milks but we have completely overlooked the plant milk and took shelter over the cauliflower.
And believe this, not even an expert is going to identify that the sauce is cauliflower based and not of the milk. The reason being cauliflower has a neutral flavour and gets involved in any of the accompanying flavours.
But yes, if you are making the vegetarian version, then you many open options. You can make milk based sauce which is easy and quick, substitute oil with butter because butter makes the best stir fries and more so can replace tofu with paneer as well.
Furthermore, let’s have a discussion over the veggies also. Please, don’t think you can add only those vegetables and in the same very quantity as mentioned in this post. Besides, what has been used, you can additionally add or substitute any with green beans, baby corn, cabbage, zucchini, green peas, bok choy/spinach and probably few more.
But be cautious that you can use only those vegetables which can be eaten partly cooked or just by stir frying because lightly sautes vegetables helps retain their crunch and color, creating a contrast with the smooth, creamy sauce.
When it comes to serving, you can pair it with roti, naan, paratha, steamed rice even as a filling for wraps with thicker sauce.
We have eaten it both with naan and rice but it tasted best with rice.
It is something perfect for weeknight dinners, kids’ lunch boxes, or even festive family meals when you want to impress with something unusual.
STEP WISE PICTORIAL RECIPE OF VEGAN MIXED VEGETABLES IN CAULIFLOWER WHITE SAUCE
MAKING OF WHITE SAUCE
Take a water in a pan and add blanched cauliflower florets, garlic and melon seeds (or cashews). Boil 10 minutes.
Drain but save the water for later use. Leave the cauliflower florets to cool down completely.
Transfer in a grinder jar. Also add bit (roughly 2-3 tbsp) of saved water. Grind to a smooth puree. Keep aside.
Heat oil in a pan. Add cauliflower puree, salt, Oregano, black pepper powder and red chilli flakes.
Cook on low heat while stirring continuously. As everything is precooked (boiled) so it doesn’t need much time. Just for a minute or two. Add a bit of saved water to adjust the consistency and cook. White sauce is ready. Keep aside.
SAUTEING VEGETABLES
Heat oil in a pan and add all the veggies mentioned in the recipe card i.e. broccoli florets, carrot, mushrooms, yellow, red and green bell pepper, onion and sweet corns. Sprinkle salt as well. Don’t add much salt as white sauce too has the salt.
Saute on high heat for a minute or two. Don’t let the veggies lose their crunch.
Lastly add the sauted tofu.
Give a good mix for couple of seconds. Drop white sauce over the veggies.
Mix well. Serve hot.
NOTES
- Add any vegetables of your choice which can be eaten just by sauteing.
- We have added tofu separately after stir frying so that it may not break while sauteing with rest of the veggies.

1 cup = 250 ml
FOR WHITE SAUCE
- 1 medium cauliflower (around 10-12 blanched florets)
- 2 tbsp melon seeds (or 1/4 cup cashews)
- 3-4 garlic cloves
- 1 tbsp oil
- 1 tsp red chilli flakes
- 1 tsp oregano
- 1/2 tsp black pepper powder
- Salt to taste
- 2 cups water
FOR SAUTEING VEGETABLES
- 1 tbsp oil
- 4-5 brocolli florets
- 1/4 cup carrot (chopped)
- 1/4 cup mushrooms (chopped)
- 1/4 cup yellow bell pepper (cut into small cubes)
- 1/4 cup red bell pepper (cut into small cubes)
- 1/4 cup green bell pepper (cut into small cubes)
- 1/4 cup onion (cut into small cubes)
- 8-10 pieces/100 grams of tofu (gently toasted in oil)
- 1/4 cup sweet corns
- 2 pinches salt
