STEP WISE PICTORIAL RECIPE OF HOMEMADE DHABA STYLE PANEER MASALA RECIPE

Take a pan and add oil.

When oil turns hot, add paneer.

Shallow fry till paneer turns brown.

Take the paneer out of the pan.

Add desi ghee in the remaining oil and also add whole spices ie cumin seeds, bay leaf, green cardamoms, black cardamom, cinnamon, mace, star anise and cloves. You can skip any of the spice if you don’t have.

When cumin splutters, add onion and ginger garlic paste.

Cook on medium heat until onion begins to turn brown.

Add tomatoes and salt.

Cook till tomatoes turn mushy and their raw aroma is gone.

Add red chilli powder, turmeric powder, coriander powder and roasted cumin powder in curd.

Whisk well.

Add curd to the pan.

Keep stirring until curd begins to boil.

Cook until oil is seen separating from curd.

Add water, kasuri methi and garam masala. Mix.

When water begins to boil, add fried paneer, green chilies and coriander leaves.

Give them a mix.

Add paneer, green chilies and coriander. mix.

Put a lid and let it simmer for a minute or two.

1 cup = 250 ml

  • 250 gram Paneer/Indian cottage cheese cut into cubes
  • 1 cup curd/yogurt
  • 1/2 cup onion finely chopped
  • 3/4 cup tomatoes finely chopped
  • 1 tbsp ginger garlic paste
  • 2-3 tbsp oil
  • 1 tbsp desi ghee
  • 1/2 tsp cumin seeds
  • 1 bay leaf
  • 2 green cardamoms
  • 1 black cardamom
  • Small piece of cinnamon
  • Small piece of mace/javitri
  • 1 star anise
  • 2 cloves
  • 1 tsp red chilli powder
  • 1/4 tsp turmeric powder
  • 1/2 tsp roasted cumin powder
  • 1 tbsp coriander powder
  • Salt to taste
  • 1 tsp kasuri methi
  • 3 green chilies slit
  • 2 tbsp coriander leaves finely chopped
  • 1/2 cup water
