Eggless  Baked Banana bread pudding with step wise pictorial and video method.

Delicious mouthwatering pudding made with ripe to overripe bananas and bread is something you would love to enjoy as a dessert breakfast for sure.

Everytime, we are left with ripe bananas, they end up in cakes, muffins, pancakes or most conveniently banana shake, and honestly speaking, we are tired of it now.

This time again, we were having 4 ripe bananas but were sure not to bake a cake or make a shake atleast.

Then came across this exotic dessert on Facebook posted by a talented chef Carolyn Pereira, which was not just simple and easy to make, but looking fabulous too at the same time.

The ingredients of the dish was so common, basic and everyone is having them in their pantry. Let’s take them up one by one.

INGREDIENTS USED

BREAD: we have used a bread made of whole wheat flour. But you can use any bread of your choice, be it white flour or brown bread.

Also the quantity of bread slices you need depends on the size of each slice as well size of your baking dish. So accordingly you may need more/less slices of bread.

BANANA : Prefer to use ripe to over ripe bananas. If you don’t have exactly 4 bananas, no issues. You may use more or less even. In case of less, you have to enhance the sugar quantity.

OATS : We used Steel Cut rolled oats.

SUGAR: Be it regular refined sugar or jaggery powder or brown sugar, you are free to use any, though we have used brown sugar. If you have less quantity of bananas or they are not ripe enough to be sweet, you need to enhance the quantity of sugar.

BUTTER : Butter is for richness. But don’t replace butter with oil.

MILK : Better to use full fat milk for more rich and creamy te texture.

VANILLA ESSENCE: This is must for any baking dishe for utmost fragrance.

RAISINS: Though optional, raisins make it more delicious. Instead of raisins, you may add any nuts of your choice.

CHOCOLATE CHIPS: The touch of chocolate in this recipe makes it more flavourful. However this too is optional.

 

 

Eggless baked banana bread pudding

STEP WISE PICTORIAL RECIPE OF EGGLESS BAKED BANANA BREAD

 

1.Out of 4, take 3 bananas which are most ripe and mash them in a bowl.

2. Add sugar and milk. Whisk.

3. Then add oats and vanilla essence and mix well.

4. Rest for 20-30 minutes.

5. Grease baking dish with butter.

6. Cut bread slices into small cubes.

7. Arrange all bread cubes in a baking dish.

8. Put some raisins and butter pieces all over the bread.

9. Now spread the milk oats mixture all over the bread base.

10. Top the dish with round chopped banana (1 left banana) and chocolate chips.

11. Bake in a pre-heated oven @180°C for 45 minutes in the middle rack with both the rods on.

12. After 45 minutes, take the dish out and let it cool down completely on wire rack.

Banana bread pudding is ready. Slice and enjoy.

NOTES

  1. If you are living in extreme hot whether, then don’t soak bananas with milk in advance. It may cause smell. Initially only soak oats and sugar with milk. And when you are about to transfer milk oats mixture to baking dish, only at that point of time, mix mashed bananas.
  2. In case you don’t have glass dish, you can also use cake tin which is used for baking cakes.
  3. Take the quantity of ingredients as per the capacity of glass dish/cake tin you are having.

Equipment

  • Baking dish Sized 34.5 cm × 5.3 cm
  • Oven

Ingredients
  

1 cup = 200 ml

  • 6 slices of bread (use any bread. We used whole wheat bread)
  • 4 ripe bananas
  • 1 cup oats (106 gram)
  • 1/4 cup sugar of your choice (50 gram - we used brown sugar)
  • 1/4 cup butter (cut into 8-10 pieces)
  • 2.5 cup whole milk (500 ml)
  • 1 tsp vanilla essence
  • 2 tbsp of raisins (optional)
  • 2 tbsp chocolate chips (optional)

Instructions
