BANANA CAKES

 

Whenever we have some leftover bananas getting ripe and as a result, no one is eating them, they usually end up in cakes. And having ripen bananas is something very common in every house.

Earlier also we have made banana cakes but every recipe is different.

The other banana cake recipe is also vegan but made with whole wheat flour and refined sugar.

Second recipe of banana cake is made in rice cooker. You can call it steamed banana cake.

And the third one is banana upside down cake. This cake is quite different in terms of looks and along with ripe bananas, it also calls for some firm bananas.

PRESENT BANANA CAKE RECIPE

 

The cake in this post is made of semolina instead of wheat or refined flour. Also sugar is replaced with jaggery.

Furthermore, instead of baking soda and baking powder, ENO fruit salt is added, though ENO too have both these leavening agents.

Very easy to bake recipe, this cake asks for very few and basic Ingredients. And no use of non dairy products makes it vegan too.

Furthermore, what we love about this cake is the quantity of bananas used.

Usually a banana cake recipe comes as a saviour of bananas but when you look at the recipe, it asks for 1 or 2 bananas only.

This recipe calls for 6 bananas so you can well guess, how flavourful the cake would be.

 

BANANA CAKES – OTHER VARIATION

 

EGGLESS BANANA UPSIDE DOWN CAKE : When you don’t have sufficient ingredients for the decoration of cyour cake, but you don’t want it to be look like just simple bread, upside down cake comes to your rescue.

BANANA WALNUT CAKE : Made with whole wheat flour and without dairy products, this cake is vegan and having the crunch of walnuts.

RICE COOKER BANANA CAKE : If you don’t have an oven and wanna bake a cake, this recipe is for you. Made in rice cooker, you can call it steamed banana cake.

 

 

Vegan banana semolina cake

Step wise pictorial recipe

 

  1. Take a baking tin lined with greased butter paper or parchment paper.
  2. Take one banana and cut it from the centre lengthwise into two parts.
  3. Place both the banana strips at the bottom of baking tin with flat sides downwards. Keep aside.
  4. Take a blender and add rest of the 5 bananas with jaggery in it.
  5. Blend them to a fine puree.
  6. Transfer puree in a bowl.
  7. Add semolina, salt, vanilla essence and walnuts. Mix. If the batter appears to be much thick, mash one more banana and add to the batter.
  8. At last, add ENO & whisk together into a fine batter. The batter will turn frothy.
  9. Immediately transfer the batter into baking tin over the laid down banana strips.
  10. Level the batter with spatula and tap the tin twice to release air bubbles.
  11. Bake in preheated oven for 30 to 35 minutes @180°C in middle rack with both the rods on.
  12. Pass the cake through toothpick test by inserting a toothpick in cake. If toothpick comes out clean it’s a sign that cake is perfectly baked.
  13. Let cake turn cool on cooling rack.
  14. Invert and cut into slices.

Notes

  1. If the batter seems to be much thick at the end, add one more banana after mashing finely to adjust the consistency.
  2. If don’t have addional banana, add bit of milk (non-dairy, if vegan) or water.

Ingredients
  

1 cup = 200ml

  • 6 overripe bananas we had the small one
  • 1 cup jaggery
  • 1.5 cup semolina/suji
  • 1/2 tsp vanilla essence
  • Salt a pinch
  • 2 tbsp walnuts
  • 1 tsp ENO fruit salt
  • Oil for greasing cake tin
