Best Roasted aam panna recipe with step wise pictorial and video method.

“Aam” is a Hindi word which means “Mango” and “Panna” means a “Tangy Drink”.

So Aam Panna is a tangy and sweet drink made from unripe mangoes.

This Vegan and Gluten-free drink is also called by different more names like Aam Ka Panna, Aam Jhora or Kairi Panha. It is one of the most consumed and most loved Indian drink.

Due to it’s cooling properties, Aam Panna is highly consumed during winters. It refreshes the body and keeps us cool against the scorching heat of Summers.

Rich in nutrients, minerals and Vitamin C, the colour of the drink varies from yellow to green.

PROCESS OF MAKING AAM PANNA

Aam panna making has three steps :

1. Take out the pulp of mangoes
2. Making of Aam Panna concentrate
3. Making of Aam Panna drink.

Let’s discuss all the heads one by one.

1. HOW TO TAKE PULP OF MANGOES

Here the pulp is not taken just by squeezing the unripe mangoes. But the mangoes has to undergo a process and here 3 ways are there to prepare mango pulp :

(a) The first one is roasting. Unripe Mangoes are roasted on flame until they turn mushy. Only then their pulp is taken out. In the present recipe, we have used this method only.

(b) The second one is boiling or pressure cooking. Boil or pressure cook the mangoes until soft. In pressure cooker, it may need 4-5 whistles to make mango mushy.

(c) And the third one is steaming. Put the mangoes in steamer and steam until they turn soft to such an extent that knife goes into them softly.

2. MAKING OF AAM PANNA CONCENTRATE

Aam panna concentrate is basically a thick syrup from which individual drinks are made.

This concentrate is made with the mango pulp taken out in step number 1, then grinded with few of the spices, mint and sugar. Just put it in a tight container and refrigerate. It stays good for 2-3 months.

Here, there are two more variations:

(a) Some don’t grind mint leaves here and muddle only at the time of making aam panna drink. We preferred to grind mint alongwith mango pulp because we don’t have a place to grow mint. So it is tough to arrange mint everytime while making drink.

(b) Secondly, some don’t grind sugar too alongwith mango pulp. They dissolve sugar separately in water, by heating, and then mixes up everything together. But we found the grinding method convenient, so adopted this one.

3. MAKING OF AAM PANNA DRINK

It’s the last stage. Mix 2-3 tbsp (for 1 drink) of aam panna concentrate with water and serve chilled.

So, this drink is made in numerous ways but we have adopted the method which was more easy and convenient.

STEP WISE PICTORIAL RECIPE OF BEST ROASTED AAM PANNA RECIPE

 

MAKING OF AAM PANNA CONCENTRATE

 
1. Wash raw mangoes and wipe them.

2. Put them on the roasting rack and roast the mangoes from all the sides.

3. Check by inserting a knife. If it is through without resistance, mangoes are charred properly.

4. Once mangoes are charred properly, remove them from the flame and let them cool completely.

5. Peel the skin and remove the pulp from the skin and seeds as well.

6. Measure the pulp. With 600 grams of mangoes, we got 3/4 cup of pulp.

7. Add the pulp in the blender jar.

8. With the same cup with which pulp was measured, add double the quantity of sugar. As the pulp was 3/4 cup, add 1.5 Cup of sugar.

9. Also add small piece of ginger, 1 green chilli, 1/4 cup mint leaves, 1 tsp roasted cumin powder and 1 tsp black salt.

10. Grind them to a fine paste without adding water.

11. Aam panna concentrate is ready.

MAKING OF AAM PANNA DRINK (1 GLASS)

12. Take a serving glass and add 2-3 tbsp of aam panna concentrate.

13. Add pinch of black salt, pinch of roasted cumin powder, ice cubes, water and mix well.

Serve chilled but before serving do taste that whether more aam panna concentrate or salt needs to be added or not.

NOTES

  1. You can increase or decrease the quantity of mangoes as per your requirement.
  2. In place of Sugar, you can add jaggery as well.
  3. For making the drink more presentable, we have decorated the edges of serving glass with a mixture of black salt and red chilli powder. Just apply lemon on the mouth of glass and rub the mouth in salt chilli mixture.

  • 1 tsp roasted cumin powder
  • 1 tsp black salt
  • Small piece of ginger
  • 1 green chilli

FOR MAKING AAM PANNA DRINK (1 SERVING)

  • 2-3 tbsp aam panna concentrate
  • Pinch of black salt
  • Pinch of roasted cumin powder
  • Ice cubes
  • Drinking water
