Gond cookies | Gond (edible gum) biscuits recipe with step wise pictorial and video method.

Made with gond/edible gum, whole wheat flour and cane sugar, these healthy butter cookies are a delicious treat for the ongoing winters.

Gond, called by the name Edible Gum in English is sourced from the plant Acacia is very healthy to consume during winters, and that is why these cookies are here.

According to Ayurveda, gond helps in boosting stamina and health, keeping away from sickness caused due to cold and cough and this is the prime reason that why it is recommended to must have during winters.

The most common recipe which almost most of the winter zone people make or buy is gond ke ladoo, which are obviously quite sweet one.

But if you can’t afford to eat too much sugar, then these mildly sweet gond biscuits are perfect for you.

DIFFERENCE BETWEEN GOND AND GOND KATIRA

Before making the recipe, if you are going to buy gond from the market then make sure you are purchasing gond and not gond katira because both are a way different. Specifically ask for “LADOO BANANE WALA GOND” or “GIVE ME GOND, NOT GOND KATIRA.”

To know how they are different, see below:

  1. Gond katira is brighter in colour in comparison to gond.
  2. Gond katira is used only in summers whereas Gond is consumed in winters only.
  3. Gond katira has cooling properties whereas Gond is warm by nature.
  4. Gond Katira is used by soaking in water whereas Gond is used after shallow frying, most probably in desi ghee.
  5. On soaking, gond katira becomes like a gel and on roasting, gond turns fluffy and becomes transparent.
  6. Gond katira is used in lime water, milk, lassi whereas with gond, you can make ladoos or biscuits.
  7. Gond katira maintains digestive health whereas Gond produces warmth in the body.
 

 

Gond (edible gum) biscuits recipe

STEP WISE PICTORIAL RECIPE OF GOND (EDIBLE GUM) BISCUITS

1.Take a pan add desi ghee and gond in it.

2. Stir fry on low heat until gond turns fluffy and translucent. It will hardly take 5 to 7 minutes.

3. Off the pan from the heat and when gond turns completely cool, transfer it in a grinder along with cardamoms.

4. Grind to coarse powder and keep aside.

 

5. Take butter and sugar in a bowl.

6. Whisk to creamy butter.

7. Add coarsely ground gond and whole wheat flour. Mix well.

8. Now using your hand, combine the mixture into a dough without kneading.

9. Make small balls out of dough and flatten them on your palm.

10. Arrange on greased baking tray lined with greased butter paper.

11. Tuck the crushed cashews on each cookie.

12. Bake in a pre-heated oven @160°C for 25-30 minutes in the middle rack of the oven.

13. Take out and let them cool completely.

  1. Make sure it is gond, not gond katira.
  2. Instead of cashews, you can use almonds or cashews for garnish.

Ingredients
  

1 cup = 250 ml

  • 1 cup whole wheat flour (143 grams)
  • 1/3 cup sugar of your choice (63 grams - we used cane sugar)
  • 1/2 cup butter (109 gram)
  • 3 cardamoms (crushed)
  • 3 tbsp gond/edible gum (35 gram)
  • 1 tsp desi ghee
  • 2 tbsp cashews (crushed for decoration)
