A unique and altogether different fritter recipe made without vegetables—just besan (gram flour) and rava (semolina). These are such a crispy bhajiyas are perfect for quick, delicious snacking.
Sometimes the most magical recipes come from the most basic ingredients and this recipe is one amongst them.
We came across this recipe on Facebook posted by a most talented home cook Ms. Jigna Mehta Modi.
It was simple yet it was beautiful and appealing. What attracted us the most is that pakodas can be made without any solid ingredient in hand.
Generally pakodas are made with paneer or onion, potatoes, bread or some kind of vegetables like gobi, palak, Nadru or mirchi, but here, this recipe calls for none of any such ingredients.
If besan is set aside, as it is part of every pakora, this recipe mainly focuses on rava. So it will not be wrong to say that prime ingredient of this recipe is Rava i.e. Semolina or Suji.
So whenever your kitchen is empty with all the prime pakoda ingredients, this recipe can be brought into action and such situation may arise when guests suddenly arrive and there’s nothing home to prepare or otherwise as well when you want to eat pakodas but ingredients are not sufficiently available.
This is important to mention here that don’t look upon this recipe just as a saviour and can be made as a substitute or kind of adjustment in acute situations. But this is one of the most delicious fritters we have ever eaten. No words to explain that how crispy they are. These Suji aur besan ke pakode gets ready under 30 minutes with the basic and simple ingredients and you can serve them with tomato ketchup, green chutney or any other dip of your choice.
STEP WISE PICTORIAL METHOD OF BESAN AND RAVA BHAJIYA RECIPE
Take a bowl and add all the ingredients in it, except baking soda and water. The list of ingredients is mentioned in the recipe card below at the end of the post. Mix well.
Now start adding water but little at a time while stirring. Initially we added about 1/2 cup of water.
Put a lid and leave for 20 minutes.
After the said period, add more water to make a thick but runny batter. Overall about 3/4 cup of water is used in making the desired consistency of batter.
Lastly add baking soda and drop a tsp of water over it.
Mix well. The mixture will turn light and fluffy.
Wet your hand and drop a ball sized batter into hot oil.
Fry on medium heat, while stirring occasionally, until pakodas turn golden and crisp.
Take the pakoas off the oil and place over paper napkins to drain off excess oil.
Enjoy hot with tomato ketchup or any chutney of your choice.

Ingredients
1 cup = 250 ml
- 3/4 cup Rava/suji/semolina
- 3/4 cup gram flour/besan
- 3 tbsp onion (chopped)
- 1 green chilli (chopped)
- 1 tsp ginger (grated)
- 1 tsp carom seeds
- 1 tsp cumin seeds
- 1/4 tsp turmeric powder
- 1 tsp red chilli powder
- 1 tsp coriander seeds roughly crushed
- 1 tsp garam masala
- 1/2 tsp black pepper powder
- Salt to taste
- Pinch of asafoetida/hing
- 1 tbsp lemon juice
- 1 tbsp sugar
- 2 tbsp hot oil
- 2 tbsp coriander leaves
- 1/4 tsp baking soda
- 3/4 cup water
- Oil for frying
