Beetroot Rice with leftover rice | beetroot pulao recipe with step wise pictorial and video method.

Beetroot Rice or beetroot pulao is an Indian dish wherein beetroot is cooked with rice and few regular spices.

There are numerous ways to make beetroot Rice but we have chosen the easiest one, which is just one pot recipe using the precooked steamed rice.

The best part of our recipe is that you can either make the fresh rice or even if you have some steamed rice in the leftover, that can easily be accommodated with the given recipe in this post.

If you are cooking the beetroot pulao in a pressure cooker, then you need not to cook the rice separately. Just add small chunks of beetroot, washed and soaked rice, given spices, water, two whistles and you are done.

Beetroot rice doesn’t need some heavy and special curry or side dish to serve. Just a plain yogurt or some raita with papad and pickle are enough to enjoy this delicacy to the fullest.

We are well versed with the fact that how healthy and the nutritious beetroot is. It boosts energy, balances blood pressure, protects the heart, improves brain function, good for skin and encourages weight loss.

So how you can skip it from adding to your routine diet. Although many especially children are the hardest targets when it comes to healthy feeding. Hardly any child  loves the taste of beetroot and in such a case beetroot rice are there to play wonders.

STEP WISE PICTORIAL RECIPE OF BEETROOT RICE WITH LEFTOVER RICE

 

  1. Heat oil in a pan and add cumin seeds, ginger, bay leaf, green cardamoms, cloves and cinnamon. Saute till ginger turns slightly brown.
  2. Add onion and green chilies. Saute till onion turns pink and translucent.
  3. Add red chilli powder, turmeric powder, coriander powder and garam masala. Mix.
  4. Then add beetroot, mix and also add water. Mix again.
  5. Put a lid on the pan and cook for 5-7 minutes or until beetroot turns slightly soft and water dries up.
  6. Add rice and salt.
  7. Mix them well.
  8. Put the lid again and cook for 5 minutes on moderate heat.

Beetroot Rice are ready. Serve hot after garnishing with fresh coriander leaves.

Ingredients
  

1 cup = 200 ml

  • 2 tbsp oil
  • 1 tbsp ginger (grated)
  • 1 tsp cumin seeds
  • 1 bay leaf
  • 3 green cardamoms
  • 1 inch cinnamon
  • 2 cloves
  • 2 green chilies
  • 1 big onion (cut lengthwise)
  • Red chilli powder to taste
  • 1/4 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • Salt to taste
  • 1 cup beetroot (grated)
  • 4 cup rice (cooked)
  • 1/4 cup water
  • 1 tbsp coriander leaves

Instructions
