Beetroot Rice recipe

Beetroot Rice or beetroot pulao is an Indian dish wherein beetroot is cooked with rice and few regular spices.

Ingredients
  

1 cup = 200 ml

  • 2 tbsp oil
  • 1 tbsp ginger (grated)
  • 1 tsp cumin seeds
  • 1 bay leaf
  • 3 green cardamoms
  • 1 inch cinnamon
  • 2 cloves
  • 2 green chilies
  • 1 big onion (cut lengthwise)
  • Red chilli powder to taste
  • 1/4 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • Salt to taste
  • 1 cup beetroot (grated)
  • 4 cup rice (cooked)
  • 1/4 cup water
  • 1 tbsp coriander leaves

Instructions
 

  • Heat oil in a pan and add cumin seeds, ginger, bay leaf, green cardamoms, cloves and cinnamon. Saute till ginger turns slightly brown.
  • Add onion and green chilies. Saute till onion turns pink and translucent.
  • Add red chilli powder, turmeric powder, coriander powder and garam masala. Mix.
  • Then add beetroot, mix and also add water. Mix again.
  • Put a lid on the pan and cook for 5-7 minutes or until beetroot turns slightly soft and water dries up.
  • Add rice and salt.
  • Mix them well.
  • Put the lid again and cook for 5 minutes on moderate heat.
  • Beetroot Rice are ready. Serve hot after garnishing with fresh coriander leaves.
