Vegan and glutenfree, Pineapple fried rice is a quick stir fried recipe made using few Chinese sauces, pineapple dices, basic spices and leftover cooked rice.

This recipe is a love triangle of sweet, spicy and tangy flavors. Anyone who loves pineapple must try this recipe bursting with different flavors from one pot.

This is the first time we are using fruit in savory recipe and believe it, this pineapple rice was awesome and delicious.

Secondly, the benefit of this recipe is that it utilizes the leftover rice. So whenever you have some rice in refrigerator, just collect few ingredients and voila, a delicious and mouth-watering pineapple rice recipe is ready in a jiffy.

But note that this is not a compulsion to have leftover rice only. You can make this recipe with the freshly made rice too.

The only thing you need to take care of the temperature of rice. They must be completely cool, rather refrigerated are the best.

So even if you are making this recipe with the fresh rice, better cook the rice well in time, cool and refrigerate.

The purpose of cooling down the rice is to prevent them from turning mushy while frying.

The cooled rice will give you a delicious flaky and fluffy pineapple fried rice.

Further you can also add Vegetables of your choice. You may add green peas, beans, potato, carrots, cauliflower or anything you like.

But we loved to keep this recipe simple and basic. Addition of other veggies could dominate the enhancing flavours of pineapple and this recipe would have become veg fried rice instead of pineapple fried rice.

 

 

STEP WISE PICTORIAL RECIPE OF PINEAPPLE FRIED RICE

 

1. Take oil in a pan.

2. Add ginger garlic paste and green chili. Saute until paste turns slightly brown.

3. Add spring onion bulbs. Saute them too until their edges begin to turn brown.(see notes below) 

4. Add cashews and saute them too. They will also change their colour to slightly brown.

5. Then add pineapple.(notes)

6. Cook pineapple for at least 5 minutes until it is well roasted.

7. Add red chili sauce and soya sauce. Saute. (notes)

8. Now add black pepper powder and mix.

9. Then add cooked rice. (notes)

10. Add salt but do note, soya sauce too has salt in it.

11. Mix until everything mixes well together.

12. Garnish with spring onion greens.

13. Pineapple cashew fried rice are ready.

NOTES

  1. You can use the canned pineapple too.
  2. In place of spring onion bulbs, you can also add regular onions.
  3. Red chili sauce can be replaced with the green one.
  4. Rice must be completely cool. Better to use refrigerated rice.

Ingredients
  

  • 2 tbsp oil
  • 1/2 tsp ginger garlic paste
  • 1 green chili
  • 1/2 cup spring onion bulbs
  • 10-12 cashews
  • 2 tsp red chili sauce
  • 1 tbsp soya sauce
  • 1/2 tsp black pepper powder
  • Salt to taste
  • 1 cup pineapple diced
  • 2 cup rice already cooked
  • 1 tbsp spring onion greens for garnish

Instructions
