Pineapple fried rice recipe

Vegan and gluten-free, Pineapple fried rice is a quick stir fried recipe made using few chinese sauces, pineapple dices, basic spices and leftover cooked rice.

Ingredients
  

  • 2 tbsp oil
  • 1/2 tsp ginger garlic paste
  • 1 green chili
  • 1/2 cup spring onion bulbs
  • 10-12 cashews
  • 2 tsp red chili sauce
  • 1 tbsp soya sauce
  • 1/2 tsp black pepper powder
  • Salt to taste
  • 1 cup pineapple diced
  • 2 cup rice already cooked
  • 1 tbsp spring onion greens for garnish

Instructions
 

  • Take oil in a pan.
  • Add ginger garlic paste and green chili. Saute until paste turns slightly brown.
  • Add spring onion bulbs. Saute them too until their edges begin to turn brown.(see notes below)
  • Add cashews and saute them too. They will also change their colour to slightly brown.
  • Then add pineapple.(notes)
  • Cook pineapple for at least 5 minutes until it is well roasted.
  • Add red chili sauce and soya sauce. Saute. (notes)
  • Now add black pepper powder and mix.
  • Then add cooked rice. (notes)
  • Add salt but do note, soya sauce too has salt in it.
  • Mix until everything mixes well together.
  • Garnish with spring onion greens.
  • Pineapple fried rice are ready.
  • Enjoy

Notes

  1. You can use the canned pineapple too.
  2. In place of spring onion bulbs, you can also add regular onions.
  3. Red chili sauce can be replaced with the green one.
  4. Rice must be completely cool. Better to use refrigerated rice.
