The word Croquette is originated from a French word ‘Croquer’ which means “to crunch”.

Croquette is something having a non-vegetarian or vegetarian inside but too soft but having ultra crunchy exterior.

If talking about the vegetarian one, the soft interior is usually attained by using paneer, cheese and potatoes and crunchy texture is borrowed from vermicelli, breadcrumbs or even cornflakes.

The prime ingredient of this recipe is our beloved, protein-rich paneer which is so versatile and is being used in variety of savoury and sweet dishes.

Paneer is the one such ingredient which makes these Croquettes extra soft, though potatoes are playing a second lead.

Also this recipe has been made in a guilt free manner by using Air fryer instead of deep frying method. Air frying gives a crispy texture without excess oil which is definitely appealing to health-conscious readers.

Now talking about its outer, we must say that vermicelli is the best choice over breadcrumbs. As Croquettes are supposed to be super crispy outside, none other than the vermicelli could do the better job. Yes, cornflakes could be equally good.

Vermicelli not only gives an amazing crunch but appealing look at the same time.

These Croquettes make a great idea for tea-time snacks, party appetizer, kids’ lunchbox or potlucks.

The best part of the recipe is that you can make them 1 or 2 days ahead of time to serve. Just prepare all the raw croquettes and leave them in the refrigerator. When needed, just fry/air fry and serve a quick snack.

You can serve them hot with green chutney, tomato ketchup or just mayonnaise.

 

 

STEP WISE PICTORIAL RECIPE OF AIR FRIED PANEER CROQUETTES WITH VERMICELLI CRUST

 

In a bowl, add mashed paneer, mashed potatoes, corns, green chilli, coriander leaves, salt, pepper and chaat masala.

Mix until everything binds well.

Take a portion of mixture and shape into a cylindrical log.

Dip it into a cornflour slurry just to get it wet.

Roll the croquette in crushed vermicelli. Press gently to help it stick.


Keep all the croquettes in refrigerator for 15-20 minutes to get set.

Place croquettes in the greased air fryer basket. Alternatively you can deep fry them. Gently brush or spray them with oil.

Air fry at 180°C for 12–15 minutes, flipping halfway, until golden and crisp.

Enjoy hot.

Ingredients
  

1 cup = 250 ml

FOR MAKING CROQUETTES

  • 1 cup Paneer
  • 1/2 cup potatoes
  • 1/2 cup Sweet corns (coarsely crushed)
  • 1 Green chilli (finely chopped)
  • 1/2 tsp Black pepper powder
  • 1 tsp chaat masala.
  • Salt to taste
  • 1 tbsp coriander leaves

FOR COATING

  • Cornflour slurry (3 tbsp Cornflour+ water as required)
  • 1/2 cup Vermicelli - (crushed into small pieces; unroasted)
  • Oil for brushing
