Cheeslings Recipe | Homemade Crispy Cheese Crackers Snack with step wise pictorial and video method.
Mini salted crackers loaded with cheese is something which can only be experienced by having them in your mouth and their deliciousness can’t be summed up in words.
Cheeselings are something we used to eat much during our childhood and it was one of the royal treat for us. Lol. These were such a royalty that they used to be kept in home all the times to attend unexpected guests. Cookies, some kind of savory mixture and these cheeslings with tea kept the center table engaged for the guests.
We never expected them to be so easy to make and home and when we tried it, they were like just fabulous. Made with minimal ingredients which are easily available as well, these cheeselings are truly a croud pleaser.
The day we made it, 2 guests visited us same evening and when they ate it, they were not willing to accept that these are homemade. They continued with it and said, this is really hard to stop them. Lol.
And more interestingly, one has told us to make a big batch for her too. So sooner we are looking forward to make them again.
So whenever you have some special guest of occasion or even a festival like Diwali, just make it and serve. It can be turned into an amazing part of diwali gift alongwith some other things like cookies or snacks or anything you are planning.
INGREDIENTS USED IN MAKING CHEESELINGS
FLOUR : They are originally made with all purpose flour i.e. maida but few people do try it with whole wheat flour and also with the mix of whole wheat flour and all purpose flour. But we would like to recommend using all purpose flour only for the authentic taste. No doubt whole wheat flour will also make something delicious for you to eat but it will not give you that original taste which you expect from cheeselings.
SALT : As these cheesy bits are savoury, you need to add salt but be cautious because this recipe is also having cheese which comes with salt. So don’t think 1/2 tsp salt is too less for 1 cup of flour. That’s enough.
BUTTER : The butter which we have added is unsalted one. But you can use salted butter also but in that case, you need to look upon the quantity of salt you are adding.
Secondly do add the chilled butter and not the hot and melted one.
CHEESE : This recipe calls for processed cheese only so don’t try to substitute it with mozzarella cheese in any case. You can enhance or reduce the quantity of cheese but according to us, 1/2 cup of grated cheese which we got from 3 cheese cubes, was more than enough.
MILK : Whatever milk you are using, make sure it should also be chilled.
STEP WISE PICTORIAL RECIPE OF CHEESLINGS RECIPE
Take maida, salt and butter in a bowl. Also add grated processed cheese.
Firstly mix everything together with hand. Then start adding milk, little at a time, and keep mixing with hand.
Make a dough. Put it on rest for 15 minutes by covering.
After 15 minutes, again knead the dough for a minute. Now take a portion of dough, size depends upon the availability of surface you have and roll it. In the meantime cover the rest of the dough to prevent it from drying. Put it on a surface, dust some flour and roll it.
Roll the dough ball, as thin as possible. Cut the odd edges. Further cut into small rectangular pieces.
Likewise do the same with entire dough and transfer in a plate. If finding difficulty in lifting the rectangular pieces from surface to the plate, just scrap it using knife.
For frying, heat oil on high heat and to check whether oil is sufficiently hot, add one piece of cheeseling. If it first sinks and then lifts up and start floating, its a sign that oil is accurately hot.
Add few pieces in hot oil.
Keep stirring delicately so that the pieces get cooked and turn brown uniformly from all sides.
Remember, cheeselings are not deep brown but very gently pale. So fry till this stage. Remove them from oil. Likewise fry the entire batch.
Once they cool completely, put them in air tight container and they stay good for a month.
NOTES
For achieving accurate texture and that puffiness, the dough needs to be rolled thin, as possible as you can. So don’t be casual about its rolling. Make yourself sure. Cheeslings recipe – recipe card

- 1 cup all purpose flour / Maida
