By following the easy and simple steps using basic ingredients, you can make your own dairy free yogurt from oats without curd. And it is just not vegan, dairy-free but beginner-friendly also.

If you are vegan, it is convenient to get the vegan milk but hard to have starter culture every time as most people don’t have access to plant based curd or probiotics. To meet that situation, we have come up with this amazing idea of setting easy no starter vegan yogurt recipe with oats. 

For the replacement of starter, you just require green chilies with stalk intact.

Now this question must be erupting in many minds that how green chilies can set a yogurt?

In the given recipe of oats yogurt without starter culture, sugar is also add which acts as food for natural bacteria and helps kick start fermentation.

Scientifically, the green chilies , especially their stalk carries natural wild bacteria .Bacteria convert sugars into lactic acid and in return, gives tanginess and sets yogurt.

But don’t worry, neither sugar makes the yogurt sweet, nor green chilies make it spicy.

Vegan Oats Yogurt Without Starter (No Curd Culture)

Step wise pictorial recipe of Vegan Oats Yogurt Without Starter (No Curd Culture)

 

Take oats and 2 cups of water in a bowl. Keep aside for 20-30 minutes. Transfer to a blender. Blend well. Spread a clean cloth on a saucepan. Pour the blended oats. Squeeze so well.

Transfer the leftover oats back to blender. Add 1/2 cup water. Blend one more time. Sieve again through the same cloth. Squeeze well. Oats milk is ready. Place the saucepan on low heat. Let oats milk simmer and turn thick.

Transfer this thick oats milk in a container in which you are intending to set the curd. Add sugar and mix well. Leave aside the milk until it comes to the temperature of luke warm. You can check the temperature by inserting a finger. Take green chilies and remove their stalk.

Insert the stalk and the green chilies into the milk but remember, keep the head side of both stalk and green chilies inside the milk. Cover the bowl properly. Place it for 12-14 hours at some warm place in the kitchen where the bowl can be kept undisturbed. After the said period, remove the green chilies and stalk from the curd.

Oats curd is ready. Enjoy.

  1. If you are already having oats milk, you can begin to recipe from just slightly heating it and setting as a curd.
  2. You can follow the similar process with any other plant based milk as well.
  3. In place of green chilies, you can use dry red chilies as well but in that case, setting period may go upto 18-20 hours.
  4. The fermentation time may vary depending on weather too.
  5. Chilies and their stalks are used when you have no starter/curd culture to set the curd/yogurt. Once you have such curd, you need only a tsp of this to use as starter for next time.
  6. Chilies and stalks can set the curd made with dairy milk also.

Ingredients
  

1 cup = 250 ml

  • 1 cup Rolled Oats
  • 2 +1/2 cup water
  • 1/2 tsp sugar
  • 4-5 green chilies with stalk intact
