Mainly and traditionally burger buns are made with refined flour and yeast. But here, we have dal based burger buns recipe for the first time, which is unique and miraculous in itself. The use of lentils makes them a creative and healthy substitute for traditional buns.

Burger buns made with gluten free flours might be available but no one could ever imagine that one day we are going to see the buns made with lentils using no flour, no yeast.
This recipe of lentil bread buns for burgers is nothing short of a miracle in the field of baking.
These soft gluten free buns without flour are not unique only, but much easier than the flour and yeast based buns. Made with simple and basic ingredients, these protein rich vegan bread buns are so easy to make that a beginner can attain the best results in the very first attempt.

Lentils are protein-rich, nutritious and naturally gluten-free. Although we have seen dals in different avatars like dhokla, paratha, khichdi, idli, dosa etc, but this gluten free bread made with lentils call for hats off in terms of innovation.
We have used 3 lentils and made 3 different types of buns but you can pick any of these to make healthy burger buns without wheat flour.

One important thing… You need not to confine yourself to make buns exclusively, but you can convert the dough into naturally gluten-free lentil bread as well. Just drop the dough in bread making mould and bake. Simple.

SOAKING OF DAALS/LENTILS
Wash and soak lentils overnight. Next morning the dals will be puffed up. Now let’s start making buns.

MAKING OF RED LENTILS BUNS
Drain the water completely from the dal. Add dal to the grinder jar. Add water. Grind dal to a fine paste. Take the dal out in a bowl.

Add psyllium husk, salt and oil. Mix well and rest for 5 -7 minutes. Then add baking soda and vinegar. Mix well. Grease hands with oil and make 3 equal sized balls out of it.

This one we are baking in Air Fryer so put the balls in greased Air Fryer basket. Sprinkle white sesame seeds on the balls. Air fry @180°C for 10 minutes. Open the Air Fryer and turn the sides of the balls. Again Air Fry for 5 minutes at the same temperature. White the buns are hot, brush butter (vegan) on them. Red lentils/masoor dal burger buns are ready.

MAKING OF GREEN LENTILS/GREEN MOONG DAL BUNS
The process, ingredients and quantity of ingredients are exactly similar the way red lentils buns are made. The only difference is add spinach (optional) for the colour.

MAKING OF YELLOW LENTILS/YELLOW MOONG DAL BUNS
Again, the process, ingredients and quantity of ingredients are exactly similar. The only difference is add turmeric (optional) for the colour.

BAKING OF BUNS
Green and Yellow lentil Buns are baked in oven and for that arrange the balls on baking tray lined with greased butter paper or silicon mat. Sprinkle white sesame seeds on them. Bake in preheated oven @180°C for 30 to 35 minutes in the middle rack with both the rods on. In case you feel they are not properly baked from the base, then shift the setting of oven to “lower rod only” and bake for 5-7 minutes. Take them out and brush with butter. Let them cool completely.

Lentil burger buns are ready.

MAKING OF BURGERS
Make the burgers the way like to. We have used Quinoa Patties and vegan mayonnaise, besides other regular ingredients needed for making burgers.

NOTES
- You can soak yellow and red lentils just 4 hours before making them but green lentils need to soaked overnight.
- If not vegan, then you can add yogurt in place of water while grinding dals.
- Be very cautious about the measurement of ingredients because small mismanagement may lead to unhappy results.

Ingredients
1 cup = 250 ml
FOR MAKING RED LENTILS BUNS
- 1/2 cup Masoor dal/red lentils
- Small piece of carrot (optional)
- 2 tbsp psyllium Husk/Isabgol
- 2 tbsp water
- 2 tsp oil
- 1/4 tsp salt
- 1/4 tsp baking soda
- 3/4 tsp vinegar (or lemon juice)
FOR MAKING YELLOW LENTILS BUNS
- 1/2 cup Yellow moong dal/yellow lentils (or chana dal)
- 2 pinch turmeric (optional)
- 2 tbsp psyllium Husk/Isabgol
- 2 tbsp water
- 2 tsp oil
- 1/4 tsp salt
- 1/4 tsp baking soda
- 3/4 tsp vinegar (or lemon juice)
FOR MAKING GREEN LENTILS BUNS
- 1/2 cup green moong dal/green lentils
- 4-5 leaves of spinach (optional)
- 2 tbsp psyllium Husk/Isabgol
- 2 tbsp water
- 2 tsp oil
- 1/4 tsp salt
- 1/4 tsp baking soda
- 3/4 tsp vinegar (or lemon juice)
OTHER INGREDIENTS
- White sesame seeds
- Butter for brushing (we used vegan butter)
Instructions
