“Makar” is the Hindi word for a zodiac sign “Capricorn” and “Sakranti” means “transition”… So Makar Sankranti is a festival celebrating the transaction (sakranti) of Sun into the Capricorn (makar) zodiac sign marking the end of winters and a day to show gratitude for the harvest.
Makar Sankranti is celebrated on the very next day of Lohri. In the morning of Maskar Sakranti, the main ingredients of this khichdi; rice, black Urad dal, salt and desi ghee are first honoured with water and prayers and thereafter donated to anyone needy.
Thereafter this khichdi is made at home and entire family eats it as a prasad.
So on the day of Makar Sankranti, most of the north indian houses have this recipe in their lunch.
But this is not like it is allowed to make on this particular day only and you can enjoy this delicacy any day any time of the month.
We have been making this khichdi following this method since ages and it comes out so delicious every single time.
If the question is erupting to anyone’s mind that what’s a big deal in making khichdi? Khichdi is the simplest of all the things to make but let us make it clear that though the process and ingredients are simple but there’s always a trouble in balancing the ratio of dal, rice and water.
Making yellow moong dal khichdi is easy to make because rice and dal share equal time of cooking but in the present recipe, both rice and dal have different cooking timings. In such a scenario, the most difficult thing is to assess the water quantity.
But in the present recipe, the water is calculated in a way that it will cook dal and rice both in different times but by adding it only ones for both. We were able to reach this assessment only after few trials so that things can become easy for our dear readers.
STEP WISE PICTORIAL RECIPE OF BLACK URAD DAL KHICHDI FOR MAKAR SANKRANTI
Heat oil in pressure cooker and add cumin seeds, bay leaf, green chilies, dry red chilies, ginger and turmeric powder. Saute for couple of seconds. Add black Urad dal (soaked overnight). Also add water and salt.
Put a lid and pressure cook for 5 whistles. Switch off the heat and let pressure release on its own. Add rice (soaked for 20 minutes). Mix. Again put a lid and pressure cook for 2 whistles. Switch off the heat and let pressure release on its own. Kali Dal ki khichdi is ready.
Enjoy with a dollop of desi ghee or curd along with pickle of your choice and papad for utmost deliciousness.

Ingredients
1 cup = 250 ml
- 1 cup basmati rice (washed & soaked for 20 minutes)
- 1/2 cup black Urad Dal (washed & soaked overnight)
- 1 bay leaf
- 2 tbsp ginger (grated)
- 2 green chilies
- 2 dry red chilies
- 1 tsp cumin seeds
- 1/4 tsp turmeric powder
- Salt to taste
- 2 tbsp oil
- 6 cup water
Instructions
- Heat oil in pressure cooker and add cumin seeds, bay leaf, green chilies, dry red chilies, ginger and turmeric powder.
- Saute for couple of seconds.
- Add black Urad dal (soaked overnight).
- Also add water and salt.
- Put a lid and pressure cook for 5 whistles.
- Switch off the heat and let pressure release on its own.
- Add rice (soaked for 20 minutes). Mix.
- Again put a lid and pressure cook for 2 whistles.
- Switch off the heat and let pressure release on its own.
- Black Urad Dal ki khichdi is ready.
