Pasta is something which is being loved by one and all irrespective of age and if something is being so lovable, that should be a thing all can eat without any guilt or restrictions.

Being Vegan or allergic to dairy shouldn’t come in your way of enjoying pasta and that’s why here we have all together a different pasta sauce in new avtar.

When we get to know about this recipe, we were little hesitant and hence reluctant in trying it just with the thought of using cauliflower in a pasta recipe and that too more specifically cauliflower as a sauce.

But you know, unless you don’t eat or try for yourself, it is a bad idea to reach any conclusions and hence here’s the recipe and this post. And the post is here because this hack is worth a try.

Vegan White Sauce Pasta with cauliflower

The Cauliflower as a sauce in pasta is truly a game-changer and we bet that you are not to miss that traditional dairy pasta anymore.

And you know, in this recipe the cauliflower will taste like as if there’s no cauliflower in it. We served it to our friends without letting them know that it’s vegan and made with cauliflower and they ate it like as if they are eating that routine pasta.

It is only after they reached half and made all appreciations to us for making this delicious pasta, we disclosed them. And they were like Aawwwww.

This is really unbelievable that such an inexpensive and underrated vegetable can transform into a creamy, velvety sauce base without dairy.

It cannot be overruled that cashews too played a role in bringing that requisite richness to sauce but still they are optional but highly recommended.

So do try this recipe which is in the growing trend of plant-based cooking.

 

 

Vegan White Sauce Pasta with cauliflower

STEP WISE PICTORIAL RECIPE OF VEGAN WHITE SAUCE PASTA WITH CAULIFLOWER

 

MAKING OF WHITE SAUCE

Take water, blanched cauliflower florets, cashews and garlic cloves in a pan.

Boil for 10 minutes.

Sieve them and leave to cool down completely. Do not discard the water. Let it also cool down.

Once it is cool, add to the grinder jar. Also add bit of water (in which cauliflower is boiled).

Grind to a smooth puree and keep aside.

Take oil in a pan. Then add cauliflower puree, sweetcorns, black pepper powder, red chilli flakes, Oregano and salt.

Mix well and cook for 2-3 minutes or until the required consistency of sauce is reached.

You can add bit of leftover water to adjust the consistency.

Once done, remove the pan from the heat and keep aside.

BOILING PASTA

Boil water, salt and oil in a pan. Add pasta.

Boil till it turns soft enough to eat. It will take 6-7 minutes.

ASSEMBLING OF PASTA

Put the pan back to heat. Add pasta after draining.

Mix well.

Serve hot.

NOTE

Blanching of cauliflowers involves a process wherein cauliflower florets are put in hot boiling water and leave it to boil for 2-3 minutes. you can add bit of salt as well in water to preserve colour and flavour. Blanching is done to get rid of any bacteria, molds or insects, possibly present in the cauliflower.

Ingredients
  

1 cup = 250 ml

FOR WHITE SAUCE

  • 8-10 cauliflower florets (blanched)
  • 1/4 cup Cashews (optional but recommended)
  • 5-6 garlic cloves
  • 2 tbsp sweetcorns
  • 1 tbsp Oregano
  • 1 tsp black pepper powder
  • 1 tsp red chilli flakes
  • Salt to taste
  • 1 tbsp oil
  • 2 cups water

FOR BOILING PASTA

  • 150 gram/2 cups Pasta of your choice (we used penne pasta made of hard wheat semolina/Durum wheat)
  • 1/2 tsp salt
  • 1 tsp oil

Notes

  2. Pasta needs to be served immediately after making because the sauce tuns too much thick while cooling down. You can adjust the consistency with a bit of water in which pasta was boiled. Our's too turned completely dry and then the consistency was adjusted with 2-3 tbsp of water.
