Pudina Paneer Recipe | Hariyali Paneer Recipe with step wise pictorial and video method.
Made in a mint and coriander based gravy, this paneer recipe is known for its aromatic and mildly spicy profile, and perfect for those who love fresh herbs.
These are mostly the onion and tomatoes and at times the curd which make the gravy for the paneer but this recipe is the rare case when the gravy is herbs based primarily even in the presence of onion & tomatoes.
The cooling essence of pudina (mint) when engulfed with vibrant taste of coriander creates a sensation dish named pudina paneer because paneer is one such ingredient which sucks the flavours around it.
Pudina Paneer is a versatile option for everyday meals and special occasions. Its unique green hue and refreshing taste make it a favorite among paneer lovers.

STEP WISE PICTORIAL RECIPE OF PUDINA PANEER RECIPE
MAKING OF PASTE
Add mint leaves, coriander, green chilies, ginger, garlic cloves and water in a grinder jar.
Grind them to a smooth puree. Keep aside.
MAKING OF PUDINA PANEER
Add oil in a pan and when it is hot, add cumin seeds. Let them splutter. Add onion and let it turn slightly brown.
Add tomato puree, coriander powder and salt. Mix.
Cook until oil separates.
Add curd while mixing continuously otherwise it will curdle. Keep mixing until curd begins to boil. It will hardly take a minute.
Now add mint coriander paste, which was made initially. Cook till oil separates. Add water and let a boil come.
Add paneer cubes and mix well.
Put a lid and cook for 2 minutes so that paneer absorbs all the flavours.
Lastly add kasuri methi, garam masala and lemon juice.
Mix well and enjoy the dish to be served with naan, paratha or roti.

Ingredients
FOR MAKING MINT PASTE
- 1 cup packed fresh mint leaves
- 1/2 cup packed coriander (with stems)
- 4-5 green chilies
- Small piece of ginger
- 3-4 garlic cloves
- 1/4 cup water
OTHER INGREDIENTS
- 250 gram paneer (cut into cubes)
- 1 onion (chopped)
- 2 tomatoes tomato puree
- 2 tbsp curd
- 1 tsp cumin seeds
- 1 tsp coriander powder
- Salt to taste
- 1 tsp kasuri methi
- 1 tsp lemon juice
- 2 tbsp oil
- 1/2 cup water
- 1 tsp garam masala
