Instant Badam Barfi – No Soak Recipe with step wise pictorial and video method.
Also called by the name Almond fudge, this is such an easy to make recipe for any festival season.
Diwali is around the corner and we all are looking forward to recipes which can be made part of diwali celebrations. And when you talk about diwali, this is obviously the sweets which occupy the front desk.
Although you are not bound to stick to diwali only, but this recipe can be tried and made for any special occasion or festival.
Other than almonds, there’s not any special or expensive ingredient which is part of this recipe. We can bet that you will find it to be the most easy recipe amongst all the burfi recipes.
INGREDIENTS USED
ALMONDS: Where in most of the almond burfi recipes, you will find that almonds need to be soaked for long hours but as we didn’t have this much time in hand, so made it in an instant manner with no compromise to taste and texture.
SUGAR : Now coming to the sweetness. Here the sweetness in the recipe is just moderate but if you want your barfi to be sweet on higher side, enhance the sugar to 1 cup.
WATER : Water is needed to melt the sugar and it is working as a moist content which will help in binding the ingredients.
DESICCATED COCONUT : Although desiccated coconut has nothing to do with almonds, but a dash of coconut brings a great texture to the barfi.
SAFFRON FOOD COLOUR: This will provide beautiful look to the burfi, just like the almonds look. However it is optional and its absence is of no difference to the final product.
CARDAMOM POWDER: Obviously this is there for the utmost fragrance.
DESI GHEE: This fact need not to be mentioned that Indian sweets are incomplete without ghee. We have used homemade desi ghee.
STEP WISE PICTORIAL RECIPE OF INSTANT BADAM BARFI – NO SOAK RECIPE
Put the almonds in a grinder jar and grind them to powder on pulse mode.
Sieve them.
If there remains few chunks of almonds, grind them again.
Sieve them too. Fine almond powder is ready. Keep aside.
Take a non stick pan and add water, sugar and saffron food colour in it.
Initially keep the flame high and let sugar melt.
When sugar melts completely, bring the heat to low and let the syrup cook till it turns one string consistency.
Add powdered almonds, desiccated coconut and 1 tbsp of desi ghee.
Mix everything so well.
When all ingredients come together, add one more tbsp of desi ghee and cardamom powder. Mix well.
Cook by stirring them continuously until the mixture begins to leave the sides of the pan.
Immediately transfer the mixture on greased tray and set it.
After 5-10 minutes, decorate it with sliver varq.
When the barfi turns slightly cool, but not completely, cut it into the shape of your choice.
Let it cool down completely. Almond burfi is ready.

Ingredients
1 cup = 250 ml
- 1 cup almonds
- 1 cup sugar
- 1/2 cup water
- Pinch of saffron food colour
- 1 tbsp dessicated coconut
- 1/4 tsp Cardamom powder
- 2 tbsp desi ghee.
- Silver varq for decoration
Instructions
- Put the almonds in a grinder jar and grind them to powder on pulse mode.
