Eggless Ragi chocolate Cookies with Jaggery with step wise pictorial and video method.
Ragi is one of the millet called by English name Finger millet.
Widely used in African and Asian countries, Millets are cereal crops and small seed grasses, used for fodder and human food as well.
High in protein and minerals, this low fat millet having rich amount of fiber is full of health benefits.

INGREDIENTS USED FOR MAKING EGGLESS CHOCOLATE COOKIES WITH JAGGERY
BUTTER : We have used unsalted butter for the recipe. You can also use the salted one without thinking that salt can hamper the taste of your cookies.
RAGI ATTA : Using this flour doesn’t mean you are restricted to use any other kind of millet flour but you are free to use any millet flour as well.
SUGAR : As the ragi millet is counted as one of the healthy food, so we couldn’t even think of adding anything unhealthy. That is why we have added cane sugar instead of refined sugar. Rest choice is yours. But if you are using granulated sugar, then better to powder it first.
COCOA POWDER: The purpose of adding cocoa powder is not just to give chocolate flavour to the cookies but the taste of ragi is bit bitter and it is difficult to consume this flour as it is. That is why addition of Cocoa powder was important.
BAKING POWDER: This is the raising agent which makes the cookies light and crispy.
STEPWISE PICTORIAL RECIPE OF EGGLESS RAGI CHOCOLATE COOKIES WITH JAGGERY
- Take a bowl and add butter in it. Whisk it until butter turns creamy.
2. Add jaggery powder and whisk it again.
3. Add flour, cocoa powder and baking powder. Mix very nice.
4. Bring it together into a dough.
5. Keep the dough in refrigerator for 30 minutes.
6. Now start giving the dough a shape of cookies, the way you like. As this flour is gluten-free, so it is tough to roll. We have greased a surface with oil, flattened a part of dough with hand and gave the shape to dough with cookie cutter.
7. Arrange all the cookies on a baking tray lined with greased butter paper.
8. Refrigerate the tray for about 1 hour so that butter in the cookies get solidifies.
9. Bake in a pre-heated oven @170°C for about 20-25 minutes.
Ragi chocolate cookies are ready. Enjoy

Ingredients
1 cup = 250 ml
- 100 grams butter
- 1 cup Ragi atta (140 gram - finger millet flour)
- 1/2 cup sugar of your choice (105 gram - we used Jaggry powder)
- 2 tbsp cocoa powder
- 1/2 tsp baking powder
Instructions
- Take a bowl and add butter in it. Whisk it until butter turns creamy.
- Add jaggery powder and whisk it again.
- Add flour, cocoa powder and baking powder. Mix very nice.
- Bring it together into a dough.
- Keep the dough in refrigerator for 30 minutes.
