PASTA & ITS TYPES
A staple dish of italian cuisine, pasta comes in different shapes, sizes and names like angel hair, macaroni, farfalle (bow ties), fettuccine, spaghetti, fusilli, rotini, jumbo shells, linguine, orecchiette, orzo, pappardelle, flat, long noodles, penne, rigatoni, ruote, wagon wheels, shells & ziti and few more probably. Amongst all the mentioned names, few are very famous and known to many. Whereas most of the names are hardly heard.
You will find the pasta made of durum wheat flour as well as of semolina. also some pasta have rice flour or lentils as a key ingredients.
PASTA USED IN MAKING THIS RECIPE
There is no hard and fast rule that which type of pasta you should use in making this recipe. However, we have used the pasta named macaroni which is made of durum wheat flour and semolina.
This is obvious because when you are cooking something for your kids, you will choose the healthiest. Said so because our son is a great lover of pasta made in white sauce and he usually bring a ready made pack of pasta for him from the shop nearby.
This pasta is cooked just by boiling in hot water and this is undoubtedly an easy method but not the healthy one. The pack must be containing preservatives and obviously all purpose flour too.
TRADITIONAL METHOD OF MAKING WHITE SAUCE PASTA
The traditional method of making white sauce is to use maida as a prime ingredient. Maida, which is called as all purpose flour in english is not deemed healthy and serving to kids is not preferred by many.
But many of the people are bound to go for all purpose flour as they don’t have the better alternative to it. Though some use whole wheat flour or corn flour, but taste of pasta is never the same as you feel after making white sauce with maida.
PRESENT RECIPE
in the present recipe of white sauce pasta, we haven’t used maida at all. Not even corn flour or whole wheat flour.
To your utter surprise, there’s no difference between the taste of two pasta recipes made differently, one with all purpose flour and other without the said flour. The star ingredient which has replaced all purpose flour is OATS. oats are world known for their health benefits and what else needed to make the favourite food of your children healthy.
Furthermore, cheese too can be added in white sauce pasta recipe but this recipe is without cheese too. Choice is yours to add cheese or not.
So you too try this recipe of white sauce pasta without maida and make your kids happy.
VEGAN OPTIONS
Though the vegan options have been mentioned in the recipe card too, below, still you can read here as repetition or elaborate suggestion.
There are only 2 ingredients used in the recipe which are not vegan. One, milk and another butter.
Milk can easily be replaced with some non dairy vegan milk. And in place of butter, it is suggested to use vegan butter or oil. Do note that pasta made in butter is more tasty than the pasta made in oil. so better to go for vegan butter, if you can easily get.
Step wise pictorial recipe of white sauce pasta without maida
1. Take a wide pan, add water in it & place on a high flame.
2. Add salt and oil in it. leave the water for boiling.
3. Till the time water boils, take oats and grind them to fine powder. keep aside.
4. When the water begins to boil, add pasta in it and let it boil on medium heat.
5. Keep stirring occasionally otherwise pasta may stick to the bottom of pan.
6. After 7 to 8 minutes check whether pasta has turned soft or not. for this, take a piece of pasta and cut it with a knife. if pasta is smooth and cuts easily, this is done. alternatively you can press the pasta piece with your finger to know about their status. soft pasta means it is cooked.
7. If pasta is done, switch off the flame and pass the water carrying pasta through a sieve. immediately pour some cold water over the hot pasta to stop it’s cooking process. keep aside.
8. Take another pan and add butter in it. put on low flame.
9. Let butter melt completely.
10. Add oats flour (prepared at no. 3 above) to the butter.
11. Roast oats flour for 1 to 2 minutes but don’t let the oats turn brown.
12. Add milk while stirring into the pan simultaneously otherwise lumps will be formed.
13. Add salt and black pepper. keep stirring.
14. When the mixture turns thick and start sticking to spatula, it is ready. stop cooking it anymore.
15. Add boiled pasta and finely mix.
16. Your white sauce pasta without maida is ready. serve hot after garnishing with roughly crushed black pepper and chilli flakes.
NOTES
1. use any kind of pasta you like.
2. you have added salt while boiling pasta, your butter could have some salt and lastly you are adding salt in your dish. so be careful while adding salt at last stage.
3. if you have readymade oats flour, use that. no need to grind the oats to powder.
4. oats flour can be replaced with all purpose flour/ maida or whole wheat flour/atta.
5. can add corns or any vegetables of your choice in your pasta.
6. You can add garlic also, if your child is willing to eat.
WHITE SAUCE PASTA WITHOUT MAIDA – RECIPE CARD

Ingredients
1 cup = 240 ml
FOR BOILING PASTA
- 1.5 cup pasta of your choice (we used macaroni)
- 1 tsp oil
- 1 tsp salt
- 3-4 cup water
FOR COOKING PASTA
- boiled pasta
- 1.5 tbsp oats
- 2.5 tbsp butter
- 1.5 cup milk full fat
- salt as per taste
- 1/2 tsp black pepper powder
FOR GARNISH
- roughly crushed black pepper
- chilli flakes
VEGAN OPTIONS
- vegan butter or vegetable oil
- non dairy milk preferably oats milk
Instructions

A perfect gluten free option especially when I sometimes need to make gluten free veggie bake for my cousin. Previously I would make a tomato sauce for him and we would have white sauce. Next time he visits, there’s going to be a surprise in store for him.
