WHAT IS CINNAMON ROLL?
Yeast leavened sweet dough filled with cinnamon sugar powder, then baked to a roll shape and served with a sugar glaze is called cinnamon roll.
Also called by the names Cinnamon bun, cinnamon Danish, cinnamon swirl and cinnamon snail, Cinnamon rolls are
commonly served in Northern Europe, Austria, Germany and North America.
At different places, it is called by the different names like :
Kanbulle in Sweden,
kanelbolle skillingsboller or kanelsnurr in Norway
kaneelirull in Estonia
kanelsnegl in Denmark
korvapuusti in Finland and
Zimtschnecke in Austria and Germany ~ as per Wikipedia.

DOUGH FOR CINNAMON ROLLS
Dough for the Cinnamon rolls is no way different than the regular bread dough. Most commonly made with all purpose flour or bread flour, this dough is fermented with yeast, either it be active, instant or fresh one.
For the soft and fluffy rolls, it is very important that dough should have been kneaded very well.
This is a very common complaint of many with respect to their breads that it doesn’t turn out soft and fluffy and the basic and major reason has been told herein above.
So knead the dough very well.
FERMENTATION OF DOUGH
Three important factors are needed for the perfect fermentation of dough i.e.
Properly covered dough,
Place to keep the dough and
Fermentation period.
Dough needs to be properly covered before you place it for fermentation. If you cling film, better to cover it with that so that air finds no place to touch the dough.
However, kitchen towel with a tight lid also works best, if it’s summers.
Secondly, the place where you keep the bowl of dough is also very important. This has to be a warm place but doesn’t mean direct under the sun.
And lastly, time of fermentation. The timing is mainly dependant on the whether conditions where you live in.
If it’s hot whether, then dough may get fermented even in hour time and if it’s summer, it may take 3 hours or more.
STUFFING OF CINNAMON ROLLS
Stuffing of cinnamon rolls is mainly of three ingredients :
Butter
Brown sugar and
Cinnamon powder.
There are 2 ways to add butter in the stuffing. One, softened butter is very well mixed with sugar and cinnamon and then applied to dough and secondly, melted butter is brushed all over the rolled dough and thereafter sugar and cinnamon powder is sprinkled over it, as we did here. Choice is yours.
BROWN SUGAR : Whatever sugar you use inside the dough doesn’t matter, but for the stuffing, it is only the brown sugar which is recommended. The simple reason is to give a beautiful and traditional impact to the rolls. Brown layer surrounded by white dough gives a beautiful presentation of rolls.
CINNAMON POWDER : This recipe is all about cinnamon.
GLAZE FOR CINNAMON ROLLS
Only use powdered sugar for making the glaze and try not to skip it because glaze takes the taste of rolls to another level.
STEP WISE PICTORIAL RECIPE OF VEGAN WHOLE WHEAT CINNAMON ROLLS
ACTIVATING YEAST
- Take a big bowl and add luke warm water and sugar and mix.
- Add yeast and let it sit for 10-15 minutes.
- After the said period, yeast will turn bubbly and frothy.
KNEADING DOUGH
- Add flour, oil and salt in the yeast mixture.
- Give it a good mix.
- Now start kneading the dough using water.
- Knead a tight dough.
- Cover the bowl either with kitchen towel and lid or with cling film.
- Place the bowl at some warm place in the kitchen for 1.5 to 2 hours.
PREPARATION OF FILLING
Mix sugar and cinnamon powder. Butter will be needed but at later stage.
PREPARATION OF GLAZE
Mix sugar, milk and vanilla essence and refrigerate it till needs to be used.
MAKING OF CINNAMON ROLLS
- After 1.5 – 2 hours, dough must have been doubled in size.
- Knead it for a minute.
- Place the dough on a clean surface dusted with flour.
- Roll the dough into 1 cm thick rectangular shape.
- Brush the melted butter all over the dough.
- Sprinkle the filling (cinnamon powder + sugar mixture) evenly over the entire dough.
- Roll up the dough forming a log.
- On the other end of the log, apply some water so that log remains properly stucked.
- Now either using a sharp knife or nylon thread, cup the log into 14 pieces.
BAKING IN AIR FRYER
- Arrange a foil cover in air fryer basket and place cinnamon rolls inside, one in the center and as much as can be adjusted on the sides.
- Cover the basket and let them rise again for 30 minutes.
- Place the basket in air fryer and air fry them for 20 minutes @140°C.
- Air Fried cinnamon rolls are ready.
BAKING IN OVEN
- Arrange cinnamon rolls in a greased baking dish.
- Bake @180°C in a pre-heated oven for 25-30 minutes or until cinnamon rolls turn brown.Enjoy them hot after drizzling a glaze.
NOTES

2. If yeast not gets activated, then don’t move ahead with the recipe. It will be a disaster.
3. All purpose flour makes more lighter rolls than whole wheat flour.
4. Proofing time of dough may vary depending on whether conditions.
5. Butter can be replaced with coconut oil.
6. You can use cake tin also for arranging the rolls. If don’t have cake tin too, them arrange the rolls loose on baking tray.

FOR ACTIVATING YEAST
- 1/2 Cup luke warm water
- 1/4 cup sugar of your choice (we used bura sugar)
- 2¼ tsp yeast (we used active yeast)
FOR MAKING DOUGH
- Activated yeast
- 2.50 cup whole wheat flour (360 gram)
- 4 tbsp oil
- 1/2 tsp salt
- Water as required
FOR MAKING FILLING
- 1/2 cup Brown sugar (we used Jaggery powder)
- 1 tbsp cinnamon powder
- butter as required (we used vegan butter)
FOR GLAZE
- 1/2 cup powdered sugar (we used bura sugar)
- 2 tbsp milk of your choice (we used oats milk)
- 1/4 tsp vanilla essence
