Vegan lemon rice | chitranna recipe | chitrannam recipe with step wise pictorial and video method.
Lemon Rice, known as chitranna in Karnataka, India is the traditional south indian recipe wherein cooked rice are sauted with lemon juice, few spices and peanuts making a sour, crunchy and full of flavours meal.
Few temples serve these rice as prasadam in South India with curd rice. And you can find them serving in resturants too.
Traditionally these rice are made using mustard seeds, fried lentils, peanuts, curry leaves, chillies and lemon juice.
Yes, at times scrapes of unripe mango are also added but that is purely optional.
No use of onion and garlic makes them satvik. Though you are free to add them but that is not remain a traditional lemon rice recipe.
The best part of the recipe is that it uses leftover cooked rice. It’s a common practice that the rice leftover from yesterday’s lunch or dinner are transformed into lemon rice and usually eaten as breakfast. Though you can cherish them in lunch or dinner to.
It is to be noted that don’t confine to leftover rice only. You can make chitranna with freshly cooked rice also.
They are such an instant rice recipe, especially when making with leftover rice and gets ready in less than 5 minutes making them perfect for lunch box too.

Step wise pictorial recipe
- Take a pan and add oil in it.
- Add mustard seeds, Chana dal and urad dal. Make sure oil shouldn’t be too hot, otherwise what you have added will burn immediately.
- Roast them till they slightly changes their colour.
- Add peanuts and saute them too till turn crisp.
- Now add curry leaves, chillies and ginger.
- Saute till ginger turns slightly brown.
- Add turmeric powder and mix.
- Add cooked rice, salt and lemon juice. Mix.
- Cook for at least a minute till everything gets mixes so well.
- Lemon rice are ready.
Serve hot.

Ingredients
1 cup = 200 ml
- 2 Cup Cooked Rice
- 2 tbsp Lemon juice
- 1 tsp mustard seeds
- 1 tbsp Chana dal/split & skinned bengal gram
- 1 tbsp urad dal/split & skinned black gram
- 1/2 tsp Turmeric powder
- 25 - 30 peanuts
- 2-3 red whole chillies
- 14-15 curry leaves
- 1 tbsp ginger grated
- Salt to taste
- 2 tbsp Oil
Instructions
- Take a pan and add oil in it.
- Add mustard seeds, Chana dal and urad dal. Make sure oil shouldn't be too hot, otherwise what you have added will burn immediately.
