Vegan lemon rice is the traditional south indian recipe wherein cooked rice are sauted with lemon juice, few spices and peanuts making a sour, crunchy and full of flavours meal.

1 cup = 200 ml
- 2 Cup Cooked Rice
- 2 tbsp Lemon juice
- 1 tsp mustard seeds
- 1 tbsp Chana dal/split & skinned bengal gram
- 1 tbsp urad dal/split & skinned black gram
- 1/2 tsp Turmeric powder
- 25 - 30 peanuts
- 2-3 red whole chillies
- 14-15 curry leaves
- 1 tbsp ginger grated
- Salt to taste
- 2 tbsp Oil
Take a pan and add oil in it.
Add mustard seeds, Chana dal and urad dal. Make sure oil shouldn't be too hot, otherwise what you have added will burn immediately.
Roast them till they slightly changes their colour.
Add peanuts and saute them too till turn crisp.
Now add curry leaves, chillies and ginger.
Saute till ginger turns slightly brown.
Add turmeric powder and mix.
Add cooked rice, salt and lemon juice. Mix.
Cook for at least a minute till everything gets mixes so well.
Lemon rice are ready.
Serve hot
