Vegan jackfruit curry | how to make kathal ki sabji is having its hindi name as kathal & widely known as jackfruit across the globe. Popularly famed as vegetarian’s meat, jackfruit is a luscious fruit having a meaty texture.
Now a days, jackfruit has become the first choice of vegans because of its exotically delicious taste & meat like texture, as earlier said. It’s chew texture has made it lovable amongst the people, especially those, who had a strong liking for non-veg previously but has now abandoned meat for obvious reasons.
Making jackfruit curry calls for no special skills & even a beginner can easily make it & that too deliciously. More so the ingredients used in making this vegan dish are so simple and basic that you need not to rush to food mart for collecting them. Step wise pictorial recipe of Vegan jackfruit curry | how to make kathal ki sabji
Take oil in a pan. We are using precooked mustard oil. Add the pieces of jackfruit. Add jackfruit in oil and leave it to fry till brown on medium heat.
Till the time jackfruit is frying, add tomatoes, garlic, ginger, green chilies and water in grinder jar.
Grind them to a smooth paste.
Once jackfruit has turned brown from all sides, take it out in some tray or plate and keep aside.
By now, oil has reduced a lot in the pan. Add cumin seeds and dry red chilli. Let cumin splutter.
Add chopped onion and tomato puree.
Also add red chilli powder, turmeric powder, coriander powder, salt and asafoetida/hing. Mix.
Put a lid and let tomatoes cook. Do stir at intervals.
When the oil separates, its a sign that tomatoes are thoroughly cooked.
Add fried jackfruit and mix.
Add water and mix.
Put a lid and let jackfruit cook for 15 minutes on low to medium heat.
Check by pressing or cutting a piece of jackfruit and from that you will be able to find whether jackfruit has turned tender enough to eat.
Lastly add garam masala, roasted cumin powder, kasuri methi and dry mango powder. Mix.
Serve hot after garnishing with coriander leaves.
NOTES
For cutting jackfruit, grease your hands with oil. This will prevent jackfruit from sticking to your hands while cutting.

Ingredients
FOR PUREE
- 3 tomatoes
- 2 inches piece of ginger
- 5-7 garlic cloves
- 2 green chilies
- 1/4 cup water
OTHER INGREDIENTS
- 500 gram Jackfruit/kathal (cut into pieces)
- 2 Onions chopped
- 1 tsp Cumin seeds
- 2 dry red chilies
- 1 tsp Kashmiri Red chilli powder
- 1/2 tsp turmeric powder
- 1 tsp Coriander Powder
- 1 tsp Garam masala
- Salt to taste
- 1 tsp kasuri methi
- 1/8 tsp Asafoetida/hing
- 1 tsp roasted cumin powder
- 1 tsp dry mango powder
- 1/2 cup Mustard oil or any oil you prefer for cooking
- 3/4 cup water
- 1 tbsp coriander leaves for garnish
